    摘要： An oven defines an oven cavity for receiving a food product for heating and comprises a housing, a door for closing the oven cavity, means for heating, means for providing air circulation, means for measuring temperature and a controller for controlling the operation of the heating means and the operation of the means for measuring temperature, wherein the means for heating comprises an oven element provided in the top section of the oven, a base element provided in the base of the oven and a microwave source, the oven cavity has a base which is ceramic and defines a heating surface which is heated by the base element in use of the oven, the base element is a radiant element, the housing comprises a floor section located between the ceramic base of the oven cavity and the base element, the floor section comprises a metal body provided with apertures, the metal body lying over the base element, the means for measuring temperature comprises a first temperature sensor and a second temperature sensor, the first temperature sensor is located in the base section of the oven and is located between the base element and the metal body, the second temperature sensor is located in the oven cavity remote from the ceramic base, and the controller is configured to control independently the temperature of the ceramic base and the temperature within the oven cavity.

The body may be configured to be disposed along a sidewall of the cooking chamber proximate to a rack or pan support. The air delivery orifices may pass through the body. The air delivery orifices may be disposed to extend transversely across the body and may be distributed along a longitudinal length of the body such that a density of air delivery orifices proximate to one portion of the jet plate is higher than a density of air delivery orifices at another portion of the jet plate.

    摘要： A speed cooking oven is disclosed comprising a cooking cavity, thermal heating source, air movement and directing means, air delivery means, and a vent assembly. Hot gas is circulated to and from the oven cavity via air delivery means such that turbulently mixed glancing, conflicting and colliding gas flow patterns mix at and about the surfaces of the food product. The turbulently mixed gas flows are spatially averaged over the surface area of the food product producing high heat transfer, thereby optimizing speed cooking of the food product.

    摘要： A speed cooking with improved gas flow by-pass mechanism for radiant cooking mode. A speed cooking oven with radiant mode is disclosed comprising a cooking cavity, a controller, thermal heating source, blower assembly, air directing means, a vent assembly and a single door gas by-pass system. Hot gas is circulated by the blower motor assembly into the oven cavity where the hot air is directed in a manner wherein a conflicting, colliding turbulent gas flow is directed at a food product providing for the rapid cooking of food products. Alternatively, a single movable door may be utilized that operates between an open position wherein gas flow exhausts from the top of the oven or in the closed position wherein gas is diverted through a conduit and back to the blower mechanism. Gas may therefore flow into the oven cooking cavity or may be diverted around the cooking cavity and maintained at the same temperature, lower temperature or elevated temperature as compared to the cooking cavity without having a direct effect on the food product being cooked.
