A method and apparatus for determining the contents of salt and water in a water-in-oil type emulsified product are disclosed herein. In the method, two kinds of physical quantities which are related to the contents of water and salt in the water-in-oil type emulsified product and are capable of being measured in a short time are measured. Then, values of the contents of water and salt are calculated from the two physical quantities measured, by use of a bivariable multiple regression equation wherein the two physical quantities are used as explanatory variables and the contents of salt and water are used as objective variables.

An optical measuring device for measuring the fat contents of milk comprises a light source, an optical condenser, a glass test tube provided for holding a set amount of the milk the fat contents of which must be measured, a lens, a photosensitive element, for example of the CCD type, and a digital display, all enclosed in a metal housing which also holds a control electric and electronic system, the fat contents of the milk being measured by detecting, by means of the photosensitive element, the diffusion depth of the light projected by the light source on the milk held in the test tube and reflected on the photosensitive element by the fat particles.

Apparatuses and processes are described for the automatic determinations of fat contents of foods, such as dairy products, e.g., milk, wherein automatic density and solids content determining apparatuses are employed, together with a computer, to determine the fat contents of food samples being tested. The density determining apparatus is preferably one which is electromagnetically excited to vibrate at its natural resonant frequency, so that from the change in such frequency, compared to a control, the mass of the sample may be determined. The means for measuring the solids content is preferably an automatic volatility computer in which electromagnetic radiation (microwave energy) is employed to drive off the volatile material (usually mostly water) in the sample, which is automatically weighed before and after such volatilization. Preferably, a microcomputer in the automatic volatility computer is employed to compute fat content from electronic feeds to it from the density and the solids content determining apparatuses.By use of the described apparatuses and processes rapid determinations of fat contents of materials may be made, facilitating modifications of production procedures to provide products of desired fat content, thereby preventing the production of off-specification materials and avoiding producing over-specification products which might otherwise be manufactured to avoid non-compliance with requirements for minimum fat contents of products.

A batch of an oil-in-water emulsion such as milk or a milklike substance is stabilized by the addition of a viscosity increasing agent, a portion of the batch is analyzed to determine the fatty content thereof and the remainder of the stabilized batch is then utilized as a reference standard for checking and calibrating apparatus which is used to determine the fatty content of such emulsions by the light transmission characteristics thereof.
