An apparatus for the preparationof ice cream, milkshakes, sorbet, frozen desserts and the like, from a pumpable starting mixture, comprises a storage container for the starting mixture and a cooling or freezing cylinder communicating with it via a supply conduit. A rotatably drivable stirring and scraping mechanism is disposed in the cylinder and the supply conduit discharges into an inlet chamber located on one end of the cylinder, a discharge valve being provided on the other end of the cylinder. Only the cylinder is provided with a heater for pasteurizing the starting mixture, and a thermostat is provided for limiting the wall temperature of the cylinder. Devices for transporting the starting mixture from the inlet chamber to the discharge valve are provided. To attain completely satisfactory results from the bacteriological standpoint as well as to prevent changes in flavor, the apparatus provides that a connecting conduit that can be blocked by a valve is provided between the storage container and the cylinder, discharging from the end region of the cylinder adjacent to the discharge valve.

The invention provides an improved process for preparing gasified ice products; particularly, a process is provided which more efficiently produces gasified ice products having improved mechanical strength and high gas contents without spontaneous popping.According to the present invention, transfer of a suspension of gas hydrate from a batch reactor is improved while at the same time the final product quality and the rate of freezing the suspension are improved. It has been found that gently agitating the suspension, while still under contact pressure, enables complete transfer of an essentially gas bubble free suspension to the freezing vessel.

A household soft-ice-cream machine is disclosed. The soft-ice-cream machine includes a housing with a removable lid, said housing including a hollow chamber in which soft ice cream may be formed. An agitator for agitating a soft ice cream mix is located in the hollow chamber. A replaceable cooling cartridge is located in the housing below the hollow compartment and cools the compartment. A replaceable pressure gas cartridge is attached to the housing and introduces pressurized gas into the hollow chamber. A soft ice cream removal valve permits removal of the soft ice cream from the hollow compartment.

Closed flow-through apparatus and method for gassifying a dairy-type confection mix by applying a pressure head of nitrous oxide to an enclosed receptacle and projecting the mix into the receptacle and atomizing it therein. Atomization is accomplished by projecting a stream of said mix against a surface in said receptacle or toward a rapidly driven impeller. A metered quantity of an edible refrigerant, such as Freon 115, is also distributed into the mix. After gassification, the saturated mix is vented under the pressure of the pressure head into a freezing chamber which is provided with a valved outlet and a motor driven dasher. A control circuit provides an automatic mode as well as a wash cycle and a dasher drive mode.
