摘要： A system for tracking and managing baking pans and trays, comprising a set of baking pans or trays that includes a plurality of individual baking pans or trays, each of which includes a unique identification tag positioned thereon, wherein each unique identification tag includes information about the individual baking pan or tray on which the identification tag is positioned; and a data acquisition system that includes at least one sensor mounted in proximity to a production line conveyor for detecting baking pans or trays positioned on the conveyor; at least one tag-reading device that is activated when the at least one sensor detects a pan or tray on the conveyor, wherein the at least one tag reading device reads information from each identification tag and transmits the information to a controller; and a controller that includes hardware and software that controls the at least one sensor and the at least one tag reading device, and that receives, processes, and outputs the information read from the identification tags on the baking pans or trays.

摘要： A method for making a flat sheet pan includes providing a piece of material having known dimensions; and forming a baking surface therein; forming an upwardly extending tension bow in the baking surface for providing structural reinforcement to the baking surface; forming a sidewall portion that surrounds the entire baking surface and defines an interior surface of the sheet pan and an exterior surface of the sheet pan; forming a structural reinforcement rib in the sidewall portion; providing a band of material that surrounds an entire upper region of the sidewall portion above the structural reinforcement rib that is operative to provide structural reinforcement to the sheet pan; rolling the topmost region of the sidewall portion downward and away from the baking surface to form a rim having an outside portion that defines the outer edge of the sheet pan and an inside portion that abuts the sidewall portion on the exterior surface of the sheet pan; and completely enclosing the band of material within the rim by crimping the inside portion of the rim against the exterior surface of the sheet pan for creating a seal that prevents contaminants from entering the interior of the rim.

摘要： A baking pan system is disclosed comprising an outer frame and an attached baking sheet. The outer frame comprises two side walls and two end portions. Each end portion connects corresponding ends of the side walls, and each end portion forms at least one fastening aperture. The baking sheet includes a plurality of extruded portions. Each extruded portion aligns with and pierces a corresponding fastening aperture of the outer frame. Each extruded portion further curls around the outer frame. Methods for fastening a baking sheet to an outer frame and unfastening a baking sheet from an outer frame are also disclosed.
