摘要: A method of preparing sucroglycerides by transesterification of sucrose and a triglyceride, whereby there is conducted a limited alcoholysis of the triglyceride before reaction with the sucrose. The sucroglycerides obtained have interesting emulsifying properties and can be used to advantage in foodstuffs.
