    摘要： A sausage encasing machine has a frame, a meat emulsion pump, a hollow meat emulsion stuffing horn with a discharge end and being longitudinally moveable on the frame. A conventional power means is provided to longitudinally move the stuffing horn. A conventional meat emulsion pump, a rotatably mounted chuck, and a lengthening device are mounted in alignment on the frame. A casing hopper is pivotally mounted on the frame between the pump and the chuck and is adapted to hold a plurality of shirred hollow elongated casings. A cradle mechanism is movably mounted in the hopper and has opposite spaced moveable finger assemblies therein for guiding an elongated shirred hollow elongated casing in the hopper to a position of longitudinal alignment with the stuffing horn. A method for positioning an elongated hollow shirred casing in position on a sausage making machine for penetration by an elongated stuffing horn involves the steps of placing a plurality of the casings in a hopper in parallel stacked relation to each other. A moveable cradle is provided in the hopper to hold an elongated hollow shirred casing from among the plurality of casings in the hopper. The cradle is moved to locate the elongated hollow shirred casing in an operating position to be filled with meat emulsion. The stuffing horn is moved longitudinally into and through the casing into the operating position. That casing is released by the cradle, and the casing in the operating position is filled with meat emulsion.

    摘要： A skinning machine includes a frame, a linkage assembly mounted to the frame, and a skinning assembly mounted to the linkage assembly via lift arms. The linkage assembly raises and lowers the skinning assembly via the lift arms from an open to a closed position, wherein the linkage assembly is located on one side of the skinning assembly. A spring cartridge is operatively associated with the lift arms via an intermediate link to equally apply bias force from the spring cartridge to the independently rotatable lift arms. The linkage assembly includes a cam slot provided through a cam arm to slidably receive a pin therein. The cam slot is shaped to lock the pin when the linkage assembly is in the closed position. A cam block is mounted to the frame and includes a cam notch adapted to slidably secure the end of the pin in a locked open position.

    摘要： A horizontal conveyor for linked sausage strands has a frame (10) having a horizontal operating platform (12) with opposite first (16) and second ends (18), opposite sides, a top surface (20), and a continuous perimeter wall (14) extending along the sides and first and second ends. The perimeter wall (14) is substantially semi-circular at the first end (16); and has a substantially parallel side portions at a midsection; and has end portions that converge towards each other from the side portions to meet at a semi-circular end portion (18A) at the second end (18). A channel (24) is located in the top portion in uniform inwardly spaced relation to the perimeter wall, and a continuous conveyor chain (26) is in the channel. A plurality of spaced hook members (28) are secured to the conveyor chain and have a shank (30) slidably engaging the top of the perimeter wall, and a hook portion extends downwardly and outwardly with respect to the perimeter wall. The semi-circular end portion of the second end (18) of the platform comprises a sausage loading station and has a diameter less than the distance between the side portions of the perimeter wall so that the hook portions of the hook members sliding over such end portion will travel at a speed greater than the speed of the hook members sliding over the side portions of the perimeter wall.

    摘要： The machine for skinning meat has a frame, an input conveyor, a gripper roll, a skinning blade assembly comprising a shoe with a skinning blade thereon, a hold down roll to apply downward pressure on a meat product to be skinned, and an outlet conveyor. The skinning blade assembly is supported on a pair of control arms that can be selectively positioned by cam elements to place the blade assembly in a desired position with respect to the gripping roll. A pair of sensor controlled air cylinders are secured to the control arms to move the blade skinning assembly with respect to the gripping roll. A cam controls the attitude of the blade gripping assembly as it is moved with respect to the gripping roll. The hold down roll is mounted on a pair of arms which are also controlled by a pair of sensor controlled air cylinders. The arms of the held down roll are linked to the control arms so that the hold down roll and the blade skinning assembly can be moved together wherein the hold down roll will not ever engage or encounter the gripping roll or the skinning blade assembly.

    摘要： A method for removing a portion of fat from meat cuts involves placing a meat cut on a longitudinal conveyor, pressing sensor probes into the meat cut to measure the relative thickness of fact and the location of lean in the meat, and then withdrawing the sensor probes from the meat. An electronic signal is transmitted from the sensor to a controller along with an encoder signal to determine the depth from the outer lower surface of the meat cut through a layer of fat in the meat to a layer of lean in the meat. Data taken from the foregoing step determine the desired position of the blade. A predetermined amount of fat is thereupon cut from the meat cut by the blade. An apparatus for removing a portion of fact from meat cuts includes a frame and at least one sensor probe including fiber optics to permit scanning of the interior of a meat cut penetrated by the probe. Power for moving the probe into the meat is mounted on the frame along with a skinning blade mounted in a path of movement of a meat cut on the frame. A controller on the frame takes data from the sensor probe and determines the linear depth of fat material on the meat cut and lean material in the meat cut. The controller then determines the operating position of the blade and positions the blade to effect the removal of the desired amount of fat.
