Abstract: The present invention relates to novel lactase variants having improved properties relative to the parent lactase, such as decreased galactose inhibition or increased galactose inhibition. The variants of the invention are suitable for production of dairy products, such as low-lactose dairy products or lactose-free dairy products. The present invention also relates to isolated DNA sequences encoding the variants, expression vectors, host cells, and methods for producing and using the lactase variants of the invention.
