摘要： A system and method for making processed meat products without the need for a vacuum system is disclosed. Meats and other meat product constituents are forced into a mixer having rotating elements for directing the constituents through a housing. The system limits the amount of air that is in contact with the constituents while resident within the housing, and provides high shear force to reduce the necessary mixing time.

The control system may receive information prescribing the formulation of the meat product, analyze characteristics of incoming constituent streams, and adjust the flows based on the final product formulation. The control system may further provide feedback regarding the final product formulation relative to the incoming constituent streams.

摘要： A system and method wherein meat product constituents are mixed with high shear force over a small volume of constituent to combine the constituents is disclosed. The system utilizes mixing devices to apply work to incoming meat streams. The high shear force deforms and contorts the meats and allows other ingredients to be forced within the protein strands of the meats, and eliminates the need for a curing stage for protein extraction.

The system includes storage and pre-input hoppers, input lines for pumping streams of meat product constituents into a continuous grinder and mixer, rotating elements within the mixer for mixing the constituents, a surge hopper, equipment for further processing such as stuffing equipment, and transport to and utilization of a continuous thermal process.

摘要： A system and method wherein meat product constituents are mixed under a high shear force to combine the constituents into a mixture having a stable protein matrix is disclosed. The system incorporates mixing devices in a housing into which the input streams are directed. The system then applies a high shear force over a small volume to mix the constituents together, thereby rapidly combining the meat constituents and other ingredients to rapidly form a stable protein matrix and eliminate the need for a curing stage for protein extraction.

摘要： An apparatus, and method of its use, for slicing food products, particularly elongated food products, in which the apparatus has a housing enclosing a rotatable slicing blade, and a sleeve which is mounted in a housing sidewall. The sleeve provides a passageway through which a food product passes and receives a treatment along its outer surface. Other additional and/or alternative features for enhancing or sustaining the cleanliness within the slicing housing also are provided, which include use of overpressure within the housing interior, introduction of HEPA-filtered gas or air therein, delivery of an antimicrobial agent therein, and/or providing interior housing wall surfaces having a surface finish (RMS) not exceeding 32 microinches. The slicing apparatus, and its method of operation, provides reliable, accurate continuous slicing capability while requiring less cleaning.
