Abstract: The present invention relates to a method for obtaining chitin and/or chitosan from insect cuticles. More particularly, the method according to the present invention comprises a first enzymatic hydrolysis of insect cuticles using at least one endopeptidase, separation from the hydrolysis medium of the hydrolyzed cuticles resulting from the first enzymatic hydrolysis, and a second enzymatic hydrolysis of the hydrolyzed cuticles using at least one endopeptidase, excluding exopeptidase.
