A twisting apparatus comprising a loading device intended to load a food product into a casing, and a braking device, is described. The loading device comprises two tubular filling bodies, or filling tubes, intended to support the casing and a twisting device intended to rotate each filling tube about its axis, and a movable frame or carriage able to support the loading device. The twisting apparatus includes a rotation unit intended to cause rotation of the loading device and angularly displace the two tubular filling bodies with respect to the braking device. Also provided is a displacement drive member connected to said movable frame or carriage so as to move with an approaching and separating displacement, or to-and-fro movement, the two tubular filling bodies away from and towards the braking device. The rotation unit includes a rotation drive member fixed to said movable frame or carriage and is able to be moved by said displacement drive member together with the loading device. The displacement drive member is also configured to move the loading device with respect to an entry member for supplying the product.

A plurality of radially spaced vanes (32A) are on the disk extending outwardly therefrom. A meat encasing machine has a looper horn, linking chain and conveyor which, prior to production, have home positions which are determined. A pulsed signal is generated as the looper horn rotates and is transmitted to an amplifier from an encoder on the servo motor for the looper horn and the conveyor. The output pulse signal is then reduced in frequency so that it can be read by a PLC. The PLC counts the pulses in the signal and can determine the relative position of the looper horn based on the count and can therefore minimize the rotation of the looper horn in the home position at the beginning of each new cycle.

The method for linking a strand of an elongated coextruded meat emulsion product having an outer surface exposed to the atmosphere without the benefit of an enclosed casing comprises subjecting the strand to a constrictive force at spaced intervals along its length to create a plurality of link points of reduced diameter along the length of the strand. The link points are surrounded by an edible linking material capable of holding the link points in a condition of reduced diameter during a cooking cycle at a temperature in excess of 60.degree. C. After cooking, the link strand is then subjected to a water based rinse at a temperature of less than 60.degree. C. wherein the linked material will dissolve and will be removed from the strand. The preferred linking material is one from a group of hydroxypropylcellulose and methylhydroxyproplycellulose.

A machine for linking sausage has a pump, a stuffing tube, a casing on the stuffing tube, and a pair of linking chains downstream from the outlet end of the stuffing tube. A scale is located downstream of the discharge end of the stuffing tube and is operatively connected to the pump to increase or decrease the output speed of the pump as the weight of the encasing product decreases or increases, respectively from a predetermined target weight. The linking chains have spaced apart linking elements. A proximity sensor monitors the linking chains as they are rotating and senses variations in the distance between the linking elements as compared to a predetermined distance to determine stretching of the chains. A mass flow sensor is located on the machine adjacent the outlet of the pump to measure the mass of meat emulsion exiting the pump. The mass flow sensors operatively connected to the pump to increase or decrease the output of the pump as the mass thereof decreases or increases, respectively from a predetermined target mass. The method of linking sausage comprises the mass flow sensing of the output of the pump and the regulation of the pump speed thereby. The method further employs the use of a proximity sensor to monitor the linking chains to determine the stretching thereof. The method further includes the step of weighing the encased product and increasing or decreasing the output speed of the pump as the weight of the product decreases or increases, respectively with respect to a predetermined target weight.

In a method for making sausages, in which the sausage meat exiting from a filling machine is filled into a sausage skin pulled off a skin caterpillar to form a sausage rope and the rope is then divided into individual sausages by twisting it between every two adjacent sausage portions, the improvement wherein the spacing in the skin between each two adjacent sausage portions in the rope is increased by pulling the leading sausage portion forwards together with the sausage skin at a speed greater than the sausage meat expulsion speed during the dividing operation.
