A core tube surrounding the upper pin descends to meet the lower pin, thereby completely piercing the fruit item and isolating its core inside the tube. A cushioned ram pushes the edible portion of the fruit item down over the core tube, through a cassette of radial knives, creating a plurality of wedges that fall immediately into an enzyme bath. The bath seals freshness into the fruit item's cell structure by preventing contact with oxygen. The solid core is ejected and the edible outside portion of the fruit item is not touched or bruised by mechanical handling.

The oriented apple was impaled on a fork and rotated while being processed. The machine herein disclosed cuts the apple into a plurality of rings and thereafter removes the core so that when the apple is released, one has a plurality of annular apple segments which are useful in decorating salads and the like.

A multi-lane machine for removing the seed cell from previously cored apples by selectively cutting a cavity therein. Various size apples are accommodated and the size of the seed cell cavity is varied depending on the size of the apple. The apples are conveyed along a path while the core hole is oriented relative to the path. Taking advantage of the alignment of the core hole, the apples are transferred onto a spindle and moved therealong by a pair of centering jaws to a seed cell station. The medial plane of the apple is positioned over a seed celling knife on the spindle while the size of the apple is measured as it is moved into the seed celling station. The knife is crescent-shaped and pivotally housed in and rotated by the spindle. A knife control mechanism extends the rotating knife into the seed cell a distance determinate of the size of the apple and in timed sequence with the movement of the jaws. Subsequently, the apple is displaced along the spindle and through a die to cut the apple in segments.

Means are provided for receiving the pears in bulk and for feeding these in single file to a pear orienting means which positions each pear in a vertical position in which the stem end of the pear is lowermost. In this position the pears are fed into a conical cup as shown at 65 in FIG. 3 in U.S. Pat. No. 3,018,179. Following placement in the vertically positioned conical cup, the pear is grasped by the pear gripping pads 71 after which the cup is moved 90* to a horizontal position in which the pear is moved toward a core tube on which it is impaled for peeling and coring by mechanism as shown in the aforementioned patent and in U.S. Pat. Nos. 3,055,408 and 3,058,502.
