摘要: The present disclosure relates to methods and/or techniques for the production of cold-brew coffee extracts, which enable continuous and rapid extraction and simultaneously improved yield of aromatic constituents and nutritionally beneficial components (e.g., polyphenols, antioxidants, and/or sugars) when compared to known cold-brew techniques. The method enables continuous processing within a shortened time frame, while producing extracts with improved flavour yield, intensity and body. In addition, cold-brew coffee extracts and instant powders prepared by said methods are described.

摘要: The present invention provides a method for the manufacture of a freeze-dried coffee powder, the method comprising:
providing a coffee extract having from 40 wt % to 55 wt % solids;
adding gas to the coffee extract in an amount of from 1 NL/kg to 5 NL/kg of coffee extract, to provide a gas-containing coffee extract at above atmospheric pressure;
depressurising the gas-containing coffee extract to form a foamed coffee extract;
cooling the foamed coffee extract to below −40° C. without shear, or with low shear, to form a frozen coffee extract,
grinding the frozen coffee extract to a powder; and
drying the powder,
wherein the step of cooling the foamed coffee extract to below −40° C. comprises:
(i) cooling the foamed coffee extract to a first temperature;
(ii) cooling the foamed coffee extract from the first temperature to a second temperature lower than the first temperature; and
(iii) cooling the foamed coffee extract from the second temperature to below −40° C.,
wherein the first temperature is 1° C. above a freezing point of the foamed coffee extract and wherein the second temperature is 3° C. below the freezing point,
wherein step (ii) has a duration of from 5 to 90 minutes, preferably 10 to 60 minutes.-

摘要: A single serve coffee brewer includes a user input device configured to receive brew information from a user. A grinding mechanism grinds whole coffee beans based on the brew information. A brew chamber includes a first section to receive and retain the ground coffee beans, a filter divider retaining the ground coffee beans in the first section, and an annular section prevented from receiving the ground coffee beans by the filter divider. A water reservoir and a heater configured to heat water from the reservoir based on the brew information. A water pump moves a measured amount of heated water from the heater to the brew chamber, based on the brew information. A drawdown release valve retains the water in the brew chamber for a set duration, based on the brew information, and releases brewed coffee from the brewing chamber responsive to the duration elapsing.
