Abstract:
Abstract:
The invention concerns a food-cutting machine (1) with a housing (2), a circular cutter blade (3) mounted to rotate within the housing, a housing-mounted protective ring (5) for the cutter blade, a sliding carriage (8) designed to hold the piece of food to be cut and to move back and forth past the cutter blade (3), and a stripper (9) located on the other side of the cutter blade (3) and designed to be swung away from the blade. The stripper (9) is mounted on a pivot bearing (10) so that it can be swung upwards, about the essentially horizontal axis (30) of said pivot bearing (10) located above the central axis of the cutter blade (3) and essentially parallel to the plane of the cutter blade, out of its working position and into a cleaning position.
Abstract:
A cutting device (10) includes a sled (12) guided on a base (14) for reciprocating linear movement along a blade (20) that is supported on the base below the sled and includes an inclined working edge (28) projecting beyond the sled. The sled is manually movable while the blade is held stationary, so that a workpiece supported on the sled is conveyed against and along the working edge for cutting the workpiece. Mechanisms for adjusting the blade height, inclination angle, and bevel angle are also disclosed. Novel saw blades are also disclosed, and preferably include a blade extension extending from the working edge beyond the maximum travel of the sled. The blade extension may remain in the kerf at the end of a cutting stroke, preventing the blade from jamming against the workpiece upon a return stroke and may also provide an unobstructed means by which to gage blade angle relative to the sled.
Abstract:
A knife blade in a fixture is provided for cutting vegetable products particularly such as potatoes, wherein the knife fixture includes a grid of knife blades adapted for producing product strips defined by rough-textured cut surfaces. Each knife blade includes a sharp cutting edge for smooth-surface cutting of products propelled hydraulically through the knife fixture. Each knife blade further includes opposed side faces each incorporating an array of shallow channels having an upstream end positioned rearward Iy from the associated cutting edge and extending generally in the direction of product travel. These shallow channels disrupt and roughen the cut product surfaces to produce rough-textured cut surfaces. In French fry potato strips, this roughened surface texture results in enhanced surface crispness after frying, or alternately enhances batter pick-up and /or crispness characteristics in a batter-coated French fry product. Enhanced finished product hold time is also achieved.
Abstract:
Abstract:
The invention relates to a kitchen appliance (10; 40; 60; 80; 150) for slicing various products such as vegetables, fruits, etc. having a base body (12; 42; 81; 152), a guide surface (20; 194), on which the product can be moved back and forth, a blade (14; 86; 160) which, for slicing, is offset in relation to the guide surface (20; 194) so that a piece is sliced off from the product to be moved on the guide surface (20) in a guiding direction toward the blade (14; 86; 160). The offset between the blade (14; 86; 160) and the guide surface (20; 194) determines the size of the slice (98). The inventive appliance also comprises an exchangeable insert (24; 48; 62; 88; 190) for changing the size of the slice. According to a first aspect, said insert (24; 48; 62; 88; 190), when inserted, is mounted in a manner that permits it to be displaced entirely on the base body, and can be fixed in different positions on the base body (12; 42; 81; 152) in order to change the size of the slice (98). According to a second aspect, the insert is designed so that it can be displaced in a guiding direction in relation to a holder (162) of the base body (12; 42; 81; 152). To this end, ramp guides (92, 102;132, 134; 166, 168, 170, 200) are provided on the holder (162) and/or on the insert (88; 190) so that a movement of the insert (88; 190) in the guiding direction effects a movement transversal to the guiding direction in order to adjust the size of the slice (98).
