The present invention provides a new method and apparatus for performing water jet cutting of food items on conveyor belts. The invention provides a cutting unit with a novel design and a method for the use of plurality of cutting devices for cutting, trimming and removing undesired tissue from food items in a more accurate but faster way than prior art methods.

Eine Vorrichtung (1) zum automatischen maschinellen Bearbeiten von in Reihe geförderten Fleischteilen (6) umfasst eine Transporteinrichtung (2), eine Schneideinrichtung (3) mit einem Schneidkopf (31) und eine Steuereinrichtung (5). Die Schneideinrichtung (3) weist eine Halte- und Führungseinrichtung (4) auf, an der der Schneidkopf (31) zum Durchführen von Trennschnitten schräg zur geraden Förderrichtung (20) längs eines geraden Verfahrwegs (40) unter festem Führungs-Schrägwinkel (a) verfahrbar angeordnet ist. Ein einen Bestandteil der Transporteinrichtung (2) bildendes, die Fleischteile (6) liegend transportierendes Transportband (21) passiert die Halte-Führungseinrichtung (4) durchgehend. Das Schneidelement (32) ist durch ein rotierend angetriebenes, zum Schneiden in seiner Höhenposition über dem Transportband (21) begrenztes Kreismesser (321) gebildet. Die Steuereinrichtung (5) korreliert beim Durchführen der Trennschnitte eine in Förderrichtung (20) gerichtete Geschwindigkeitskomponente (V T ) der Verfahrgeschwindigkeit des Schneidkopfes (31) mit der Fördergeschwindigkeit der Fleischteile (6) in Förderrichtung (20). Die Vorrichtung (1) wird insbesondere zum Enthäuten von Fischfilets (60) verwendet, wobei von dem Fischfilet (60) ein Schwanzendstück (610) mit einem Fasenschnitt abgetrennt wird, der ein schräg angefastet Filetende als Einfädelungshilfe zum Einzug abzutrennender Haut (64) in den Einzugsspalt einer Enthäutemaschine erzeugt.

Die Erfindung betrifft eine Vorrichtung zum Oberflächentrimmen von Fleisch, insbesondere von Fischfilets, umfassend ein Transportelement zum kontinuierlichen Fördern der zu bearbeitenden Produkte in Transportrichtung T in den Bereich eines Messerkopfes, ein Element zur Lageerkennung der Produkte, einen Messerkopf zum Trimmen der Produkte sowie eine Steuerung zur Bewegung des Messerkopfes in Abhängigkeit der durch das Element zur Lageerkennung ermittelten Daten und Informationen, die sich dadurch auszeichnet, dass der Messerkopf zur automatischen Ausführung freier Trimmschnitte entlang der Oberflächenkontur der Produkte ausgebildet ist. Des weiteren betrifft die Erfindung eine Vorrichtung zum Verarbeiten von Fleisch mit einer vorgenannten Vorrichtung sowie ein entsprechendes Verfahren zum Oberflächentrimmen.

In a method and an apparatus for processing and packaging fillets, such as salmon fillets, the fillets are fed on to a conveyor belt (15), where they are cut into individual fillet slices by a slicer (2) and are analyzed immediately thereafter in a camera (9), where characteristic parameters of the fillet slices are determined, and the results are fed to a calculation unit, the fillet slices are moved further on by the conveyor belt to transport tables (8) positioned along the conveyor belt and having arranged thereon package trays (7) to which the fillet slices are transferred. Each transport table has a weighing cell (10) which currently weighs the weight of each individual package tray with placed fillet slices, and the weight is transferred to the calculation unit, which may determine on the basis of this which type of fillet slice is to be transferred the next time to a given package tray.

An apparatus (1) for the cutting-up of fish, fish fillets and the like in slices etc., comprising a feeding unit (2) which comprises means for the feeding of the fish/fillets, said feeding unit (2) conveying the fish/fillets to a cutting unit (3) which cuts the fish/fillets in slices, and a unit (7) which comprises means for the collection and processing of data, which means comprise means for the registration of the length of the fish/fillet in the feeding direction and/or the weight of the fish/fillet, and in that the feeding unit comprises a plane (9) on which the fish/fillet is placed and fed forward, said plane forming a settable and adjustable angle to the horizontal plane, means (5) for the automatic adjustment and setting of the angle as a function of the length and/or the weight of the fish/fillet, and also a gripping device (4) which comprises means (21) for the handling of the slices from the area in which the cutting takes place. There is hereby achieved an apparatus which does not suffer the disadvantages of theknown apparatus, and which can operate in a fully automatic manner from the moment that the fish/fillet is placed on the conveyor to when the packed slices are transported away, and where there is achieved an automatic regulation of the angle of the table on which the fish/fillet are placed, so that the slices cut off are uniform, and where by a single and uncomplicated measurement a minimum of wastage takes place, and where the subsequent handling of the cut slices is effected automatically.

For the building up of weight determined batches of food-stuff items delivered from a processing machine such as a slicer or portion cutter, it is known to make use of special batching machines which, by selective weight-controlled merging of the items in a row of receiver stations, can build up batches of predetermined weight, even despite some weight spread in the flow of supplied items; however, the efficiency of the batching may be higher or lower according to the factual weight spread of the items. With the invention advantage is taken of a feedback function from the control unit of the batching machine to an adjustment unit of the processing machine, such that it becomes possible to influence the factual weight spread for optimizing the efficiency of the batching operation.

An improved loin knife (64) for a loin puller apparatus (12) having a scribe saw (72) with an associated decelerator and depth gauge (63) immediately in advance of the loin knife for the purpose of cutting through the ribs of the carcass middle. The loin knife has a bight region (65) that is positioned and configured so as to extend through the fatback and to pull the loin portion with the fatback, and in pork carcasses the skin, intact. The bight (65) has a substantially horizontal region that cuts through virtually the entire length of the fingers of lean, which include portions of the serratus dorsalis muscle. To assist in orienting a carcass middle with regard to the scribe saw and loin knife, the apparatus is provided with a load bar (112) that engages the chine (114) and provides for a more uniform alignment of the carcass middle with the loin knife in relation to the position of the chine. Also, a guide bar (122) that is in substantial alignment with the load bar is provided to assist in the initial alignment of the carcass middle as the carcass middle is loaded into the loin puller. A laterally driven impeller (130) is provided to force the chine portion of the carcass middle into the load bar, thus straightening the chine against the load bar. The impeller is also rotatably driven to assist in driving the carcass middle toward the loin knife. A programmable logic controller, ("PLC") (210), is provided to control various operations of the loin puller device.

Arrangement for fluid jet cutting, especially of food products, comprising a nozzle (11) for a cutting fluid jet, and a drive means (5-9) for translational moving of the nozzle (11) on a stand. The drive means comprises a tube (3) included in the stand, a pair of magnets (8, 9), one (8) positioned in the tube (3) and the other (9) being annular and enclosing the tube (3), a motor (5) and a belt (7) or the like having a run positioned inside the tube (3) and fixedly connected to the one magnet (8) and arranged to move the last-mentioned magnet in the tube (3) in the longitudinal direction thereof, the tube (3) consisting of a material which is permeable to magnetic field lines, the one magnet (8) positioned in the tube being adapted to carry along, during operation of the motor (5), the other, annular magnet (9) to which the nozzle (11) is attached, the ends of the tube (3) being connected in a liquid-tight manner to two casings (4, 4'), one (4) accommodating the above-mentioned motor (5). The arrangement is easy to clean and permits lubrication of the drive means components, for example with agents which are not approved for food products. A plant for fluid jet cutting comprises the arrangement and a belt conveyor (1), preferably arranged for a constant rate of motion, the tube (3) or the tubes (3, 3') being fixedly arranged on the stand transversely of the travelling direction of the conveyor (1).

Seafood products are made from squid by cleaning a squid by removing arms and tentacles from the squid; removing visceral content from the squid; steam cooking the squid; reducing the moisture content of the squid to between 40% by weight and 72% by weight; and shredding the squid after the step of reducing the moisture content. The shredded squid can be treated with marinades for flavor enhancement to create a variety of world cuisine tastes. The product is ready to serve without further cooking.
