    Abstract: A method for producing rice with a low glycaemic index and a low glycaemic load comprises, in sequence, a step of preparing husked brown rice, a step of humidifying the husked brown rice with water at room temperature until reaching a moisture content equal to 18-22%, a step of resting the husked brown rice for 24-60 minutes, a first heating step comprising heating the husked brown rice until the husked brown rice reaches a temperature of 80-85°C, a first step of cooling the husked brown rice in an environment at a temperature lower than the room temperature until the husked brown rice reaches a temperature of 10°C, a step of reconstituting the husked brown rice for 24-72 hours, maintaining the moisture content, until the husked brown rice reaches the room temperature, a second heating step comprising heating the husked brown rice until the husked brown rice externally reaches a temperature of 60- 65°C, corresponding to an internal temperature greater than 70°C, a second cooling step until the husked brown rice reaches the room temperature, a step of refining the husked brown rice having a moisture content equal to 18-22% and a drying step until reaching a moisture content equal to 12-13%.

    Abstract: A profood item for preparing a puffed food product and method for producing the profood item. Profood item shell comprises a first foodstuff, the shell characterized by a hardness and rigidity able to withstand breakage when subject to temperature/pressure below breakage threshold conditions. Profood item interior contained within shell comprises a second foodstuff comprising at least one starch and a liquid adapted to form a vapor when subjected to heating, where an increased pressure of the vapor when heated causes a rupturing of the shell when breakage threshold conditions reached, inducing a sudden release of vapor at high pressure resulting in puffing of starch to produce puffed food product. The profood item micropellet may be prepared using an extrusion process and coated with a coating process to form a shell.

    Abstract: A machine for preparing snacks based on puffed cereals and the like has an actuation system which comprises a source of compressed gas (CA) and pneumatic actuator means (1001, 2001, 1002, 2002), controllable to cause relative linear displacements among an upper mould plate (UP), a lower mould plate (LP) and an intermediate mould plate (IP), to compress a cereal dose (P) between the upper die (M) and the lower die (M). The pneumatic actuator means (1001, 2001, 1002, 2002), comprise a displacement pneumatic -cylinder (2001, 2002) and a compression pneumatic -cylinder (1001, 1002). A plunger (102) delimits in the compression pneumatic -cylinder (1001, 1002) a first and second chambers (A, B) having variable volume, wherein: - the second chamber (B) is connected in fluid communication with the source of compressed gas (CA) via a first duct (L1, La1, La2), - the first chamber (A) is selectively connectable to the second chamber (B) through a second duct (SLa, SLb) on which a respective control valve -arrangement (3 Va1, 3 Va2) is operatively set, and - the first chamber (A) is also connected to the second chamber (B) via a third duct (EL). On the second duct (SLa, SLb) is also operationally set a flow-regulator device (FR1, FR2), configured for regulating or choking the flow of compressed gas between the first chamber (A) and the second chamber (B) when the second plunger (102) is displaced by the displacement pneumatic cylinder (2001, 2002). A shut-off member (CV1, CV2) is operatively set on the third duct (EL), capable of: - enabling passage of compressed gas from the first chamber (A) to the second chamber (B) when the plunger (102) is brought by the displacement pneumatic-cylinder (2001, 2002) from the retracted position to the advanced position, and - preventing passage of compressed gas from the second chamber (B) to the first chamber (A) when the plunger (102) is brought by the displacement pneumatic -cylinder (2001, 2002) from the advanced position to the retracted position.
