The present invention discloses a method and composition for the treatment of bacterial contamination of food by the use of a phage associated lysing enzyme, preferably blended with an appropriate carrier. The method for treating food stuffs comprises treating the food stuffs with an anti-infection agent comprising an effective amount of at least one lytic enzyme produced by a bacteria infected with a bacteriophage specific for the bacteria.. Additionally, chimeric lytic enzymes shuffled lytic enzymes, and holin proteins, either alone or in combination, may be used to treat or prevent bacterial contamination of foodstuffs. The lytic enzyme can be used for the treatment or prevention of various strains of Staphylococcus, Streptococcus, Listeria, Salmonella, E. coli, Campylobacter, Pseudomonas, Brucella, other bacteria, and an,Y combination thereof. Feed for livestock, poultry and beef in slaughterhouses, canned and bottled goods, salad bars, and eggs are just some of the food items that can be treated with at least one lytic enzyme to reduce the risk of food contamination by bacteria.

A method and device for determining the presence and concentration of total microbial contamination or the presence and concentration of a specific microbial species is described. The method consists of a means of collection of the microbes from an air, liquid, surface or other sample and suspending them in fluid phase (3). An aliquot of the fluid phase (3) is introduced into a disposable test device which allows filtration of the sample to concentrate the microbes and to remove extraneous substances including somatic cells, and concentration of the microbes. The total concentration of microbes is determined by adding a somatic and bacterial releasing reagent to a disposable test device (25) which comprises a membrane (26) containing the luminescent reagents luciferin and luciferase, and introducing the disposable test device (25) into a luminometer that can read the luminescence from the underside.

A method and composition for treating a Bacillus anthracis infection is disclosed which comprises the steps of: administering to the site of an infection or colonization an effective amount of at least one lytic enzyme genetically coded for by a bacteriophage specific for Bacillus anthracis, wherein said at least one said lytic enzyme is specific for and has the ability to digest a cell wall of said Bacillus anthracis. The lytic enzyme may be chimeric or shuffled, and a holin protein may also be used. The sequence for the lytic enzyme gamma bacteriophage is disclosed.
