The invention concerns the use of enzymes derived from insect cells with α-galactosyltransferase activity for implementing an enzymatic method for preparing α-galactosyl compounds, said method comprising a step which consists in transferring a galactose residue onto a specific substrate galactose terminal residue. The invention also concerns compounds obtained by said method and their uses in food and pharmaceutical compositions.
