The fatty (meth)acrylates are obtained by reacting epoxidized fatty acid esters and/or epoxidized triglycerides with acrylic acid and/or methacrylic acid. The invention relates to a method for monitoring the stability of compositions and reaction mixtures containing vinylogous compounds, especially (meth)acrylic acid and/or (meth)acrylate. According to said method, the content of dissolved oxygen in the composition or in the reaction mixture is established and compared with pre-determined reference values. An incipient or imminent polymerisation is identified as early as possible, namely a long time before the polymerisation actually begins. The monitoring can be carried out both during the storage and the transport and also during the reactions, especially during the esterification of (meth)acrylic acid with monohydric or polyhydric alcohols, in a simple, cost-effective and especially reliable manner.
