The invention relates to a process for the production of crystalline xylose from xylan obtained from a xylan containing paper-grade hardwood pulp conversion to dissolving-grade pulp comprising the steps of (a) extracting said paper-grade hardwood pulp with an alkali or enzyme to obtain extracted xylan; (b) subjecting the xylan to conditions sufficient to hydrolyze xylan to xylose by enzymatic or acid hydrolysis; (c) optionally purifying the xylan hydrolyzate obtained in step (b); (d) subjecting the xylan hydrolyzate from step (b) or (c) to crystallisation conditions sufficient to xylose crystallization; and (e) recovering the crystallized xylose.
