A family of lipid binding and transporting proteins, a method for preparing same from fungi, and their use in cosmeticology, the agri-foodstuffs industry and pharmacology, are disclosed. Said proteins are capable of binding, transporting and/or rearranging lipids between membranes, optionally in combination with active principles. Furthermore, the proteins are hydrophobic and acidic, have a molecular weight of under 50 kDa, and may be prepared from a non-toxic filamentous fungus capable of developing on a lipid-enriched medium, particularly from raw extracts of said fungi.
