Disclosed is a process for producing alanylglutamine, which comprises reacting an N-(2-substituted)-propionylglutamine compound represented by the formula (I):
where X represents halogen, alkylsulfonyloxy, or substituted or unsubstituted arylsulfonyloxy, with ammonia at a temperature of 60°C or below. In accordance with the present invention, highly purified alanylglutamine can be produced in a high yield, without racemization.

N-Chloroacetylglutamine useful as an intermediate for producing glycyl-L-glutamine which has higher stability than L-glutamine and is used as a component of an infusion solution can be obtained with high efficiency at low cost.
