Effective disinfection and washing method of the immobilized lactase prepared by the immobilization of the lactase derived from Aspergillus oryzae on an insoluble high polymer compound by covalent linkage or the same lactase on a macroporous ion-exchange resin carrier by adsorption is invented taking an advantage of the fact that the immobilized lactase has outstanding resistance to chemicals and wide pH stability so that the decrease of the enzyme activity is minimized and the practical use of the immobilized lactase is realized.

A stable and water-insoluble immobilized lactase having a high lactose-hydrolyzing activity is produced with industrial advantages by immobilizing a lactase derived from Aspergillus oryzae on a macroporous phenol-formaldehyde anion-exchange resin. The immobilized lactase can be used in the continuous enzymatic hydrolysis of lactose in milk, whey and whey permeate.

(S)-α-cyano-3-phenoxybenzyl alcohol, which is the alcohol moiety of pyrethroids, effective insecticides, is prepared by reacting an ester of racemic (R,S)-a-cyano-3-phenoxybenzyl alcohol with an esterase, wherein the ester of (S)-α-cyano-3-phenoxybenzyl alcohol is predominantly hydrolyzed. Thus, asymmetric hydrolysis permits optical resolution of the (S)-isomer alcohol from the ester of its antipode efficiently. The esterase may be of microorganism or animal pancreas or liver.

Thus. asymmetric hydrolysis permits optical resolution of the (S)-(-)-isomer alcohol from the ester of its antipode, in a high optical purity.
