This invention provides for an environmentally friendly live bait-modeled artificial lure for catching fish. The artificial lure in the present invention is unique in that it contains as its chief components (1) a protein crosslinked by a protein crosslinking enzyme, and one of or both that selected from (2) a non-water-soluble polysaccharide and (3) a group consisting of monosaccharides, oligosaccharides, glutinous starch syrup, and dextrins. By making the above agents active ingredients, the agent mixture can be produced to be moderately viscous and, as a result, manufacturability can be improved and degassing can be performed easily even in the case of air bubble engulfment.

The present invention provides sugar beet pectin (modified sugar beet pectin) having improved or enhanced emulsifying properties and emulsion stability, compared to natural sugar beet pectin. Also provided is a method for producing the modified sugar beet pectin. The modified sugar beet pectin contains a water-insoluble component, and has a higher molecular weight after high-pressure homogenization than ordinary sugar beet pectin. The water-insoluble component absorbs water to form a hydrogel when the modified sugar beet pectin is dispersed in water at 25°C to a final concentration of 0.1 mass%.

The present invention provides a method of suppressing fading of a tar colorant. More specifically, the present invention provides a method of suppressing a tar colorant fading phenomenon that occurs specifically in compositions containing (a) the tar colorant, and (b) at least one of reducing sugars, ascorbic acid compounds, or metals. This method can be attained by mixing (c) at least one selected from the group consisting Of isoquercitrin, enzymatically modified isoquercitrin, rutin, enzymatically modified rutin, Chinese bayberry extract, and rosemary extract into such a composition, thus making the component (a), the component (b) and the component (c) coexist. The present invention further provides a composition for which fading of a tar colorant is suppressed using the above method, more specifically a composition containing at least one of reducing sugars, ascorbic acid compounds, or metals in addition to the tar colorant.

A method of heightening the emulsifying power of gum arabic without causing coloration or offensive-odor emission. The method comprises: a step in which an aqueous solution of gum arabic which has undergone no heat treatment is prepared in a concentration of 50 mass% or lower; and a treatment in which the aqueous solution is held under the conditions of a temperature lower than 60°C for at least 6 hours. Thus, a modified gum arabic can be obtained which is colorless, emits no offensive odor, and has excellent emulsifying power. The modified gum arabic is suitable for use as an emulsifying agent for beverages, snacks, chewing gums, oily perfumes, oily dyes, oil-soluble vitamins, etc.
