The process includes preparing a dry sausage meat mixture, stuffing the mixture into a casing or mould, fermenting the mixture, heat treating the mixture, cooling the mixture to a temperature sufficiently low to permit slicing, slicing the sausage, placing the sausage onto a conveyor (202), and passing the conveyor and sausage through a chamber (300). The process also includes introducing a supply of conditioned air into the chamber, the air having a relative humidity below about 60% and a temperature in the range of at least about 40°F to 130°F (10 to 54 Celsius), and introducing a supply of microwaves into the chamber. The air supply and microwaves are selected to reduce the moisture content of the meat to a predetermined moisture to protein ratio.

The inventions relate to processing meat, poultry and fish, as well as to mechanical engineering. At processing beef and pork, flesh is stripped from the biggest bones only. The stripping of muscle tissue from other bones, cartilages and tendons is carried out at mincing meat with the cutting unit of a special mincer. A separator incorporated into its cutting unit performs the layer-by-layer degassing of minced meat and selects hard and connective tissue inclusions. Minced meat is characterized by low calcium content. The products of primary meat separation are accumulated and afterwards minced with the cutting unit of the same mincer. At that, tissues are stripped from pieces of hard inclusions, muscle and adipose tissues are additionally minced, and minced raw materials are separated. Produced forcemeat, consisting mostly of connective tissues, is used instead of meat as a food additive at producing foodstuffs. The feeding unit and the cutting unit of the mincer are adapted for processing large meat pieces, including meat on bones, as well as poultry or fish carcasses. The design of the mincer feeding unit and cutting unit exclude the crushing, rupture and abrasion of tissues. In the cutting unit head (17) there are a receiving plate (25), an intermediate plate (26) and a cutting-separating plate (27), as well as unilateral knives (18 - 22). They are installed with formation of three direct-flow chambers (28, 29, 30). The plates and knives need no intermediate sharpening. The cutting unit of the special mincer is equipped with a system for automatically pressing knives against plates. This system reduces the wear of the tools and decreases iron content in minced meat. The wearing part shape of knife blades and plates is modified in such a way that formation of gaps between their interacting surfaces is impossible. The edges of knife and plate cutting elements are continuously renewed. The use of the inventions makes it possible to mechanize the most labour consuming and unhealthy processes taking place at processing meat, poultry and fish, to increase labour productivity, to greatly improve the quality of foodstuffs, to reduce their cost and to simplify mincer maintenance.

Um einen möglichst hohen Abtrennungsgrad von Muskelgewebe gegenüber Knochen, Bändern, Knorpeln, Faszien, Bindegewebe, Fettgewebe und dergleichen bei schonender Behandlung zu erzielen, wird eine Verfahrensweise und eine Vorrichtung zum Aufbereiten von Fleisch vorgeschlagen, bei der das Fleisch in einem ersten Schritt durch Aufteilen in flächige Stücke bestimmter Dicke in einer Schneideinrichtung (2) zerkleinert, in einem zweiten Schritt ein mechanisches Aufschließen der flächigen Fleischstücke bestimmter Dicke in einer Aufschließeinrichtung (3) erfolgt, und in einem weiteren Schritt ein ein- oder mehrstufiger Trennvorgang in einer Trenneinrichtung (4) erfolgt, wobei das mechanische Aufschließen der flächigen Fleischstücke im zweiten Schritt genau auf den Trennvorgang im weiteren Schritt abgestimmt ist.

This invention relates to a method of continuously grinding finely and mixing of meat and fish meat which comprises continuous steps of crushing quantitatively and continuously frozen prism blocks of meat or fish meat, adding 0∩0.5 parts of sodium carbonate or sodium hydrogencarbonate and 0∩5 parts by weight of table salt or sodium caseinate to 100 parts by weight of the crushed blocks, mixing and finely grinding them, adding an emulsifier at a predetermined ratio, further mixing and emulsifying the mixture. This invention relates also to a method of continuously grinding finely and mixing beans which comprises continuous steps of crushing continuously frozen prism blocks of beans that are crushed coarsely, then finely grinding crushed blocks. This invention relates further to an apparatus for continuously grinding finely and mixing meat, fish meat and beans which comprises a crushing apparatus consisting of a crushing cylinder, a crushing rotary drum having feed vanes, a plurality of crushing blades having U-shaped blades and supported rotatably, a frozen raw material block feeder, and delivery vanes disposed around the outer periphery of the crushing rotary drum; and a fine grinding apparatus consisting of a fine grinding cylinder, mixing/fine grinding blades, and a fine grinding rotary drum having a plurality of scraping feed blades and fine grinding feed vanes and supported rotatably.

At least three controllable in-feed channels at an in-feed end of a conveyor supply separate streams of the first and second food products. One of the in-feed channels supplies the first type of food products and two of the in-feed channels supply a second type of food products being distinguished via a different lean/fat ratio estimate. The determined weight of food products and the measured lean/fat ratio of the food products are used as operation parameters so that the mix fulfills the at least two target criteria.
