The invention relates to a device and a method for slaughtering fish, in particular white fish. The inventive device (10) is characterised in that the intermittently driven fish receiving drum (12) can be rotated about a horizontal axis (20), thus improving the operation of the device, as the fish can be introduced without a lifting stroke. The intermittent motion of the fish receiving drum (12) also allows the actual processing of the fish to be carried out whilst the drum is in its resting position, thus enabling in particular, an improved quality of cut to be obtained.

The invention relates to fish treatment machines which operate with a guiding element for the fish, in the form of a chisel (20) introduced into the anal orifice of the animal, whereby the correct functioning of the downstream tool (21) depends on the correct positioning of said chisel. The aim of the invention is to avoid damage to the fish due to incorrect positioning of the chisel/fish and to guarantee correct positioning of the fish with regard to the tool. The chisel is assigned a monitoring device (30) comprising a sensor (31) for the positioning of the chisel/fish, a computer (32) for comparing the desired and and real values with respect to the sensor values in addition to comprising an actuation device for the tool impinged upon by signals emitted by the computer. The sensor (31) can be a transmitting/receiving device which comprises a light source (312) and a light guide (311).

Es ist ein Verfahren zum maschinellen Entweiden von insbesondere welsartigen Fischen sowie eine Maschine zur Durchführung des Verfahrens beschrieben. Kennzeichen des Verfahrens ist es, daß die Bauchhöhle im Bereich der Analöffnung geöffnet, vor oder danach die Kiemenhöhle unter Durchtrennen des Schlundes und Öffnen der Blutbahn geöffnet, und der Bauchinhalt von der Kiemenhöhle her durch die Öffnung im Analbereich hindurch oder von dieser her durch die Kiemenhöhle hindurch entfernt wird. Die Fische werden durch einen Muldenförderer (1) quer zu ihrer Längsachse gefördert. Das Öffnen der Bauchhöhle im Bereich der Analöffnung erfolgt durch Heraustrennen der die Bauchflossen tragenden Knochen- oder Knorpelplatte (6.2). Das Entfernen des Bauchinhaltes besorgt ein mit dem Förderer synchron umlaufender Rotationskörper (5.1) mit an seinem Umfang in schraubenwendelförmiger Ausrichtung hintereinander angeordneten Werkzeugen, die freitragend angeordnet sind und ein Räumwerkzeug (5.5) mit Kratzersegmenten (5.6), ein Bürstenwerkzeug (5.7), eine Hochdruck-Sprüheinrichtung (5.10) und ein Schneidwerkzeug (5.12) zum Längsöffnen der Bauchhöhle umfassen.

By inserting, in a procedure for the cleaning of roundfish, including especially removal of gut from fish such as cod, coalfish, haddock, salmon, trout and similar roundfish where the fish is retained during cutting and gut removal, a gill holder (9, 10) into each of the fish (1) gill clefts, by closing gill holders (9, 10) around the fish head while forming a corner at a contiguous angle (38) of 20-50, preferably 30° by the fish throat point (4), by moving a back head support (12) at the fish back head (5) forward and bringing it to bear predetermined pressure against the back head so that the fish head by the throat point is pressed against the corner which, as mentioned above, is formed by the two gill holders (9, 10) moved towards each other, a brand new retaining of a roundfish is achieved in the approximately triangle head cross section between the fish throat point and back head, and also the fish is having its throat point placed in the same place regardless of the roundfish size, i.e. where the two gill holders meet to form said corner. This in turn entails that much more accurate cuts can be made, and far more accurate cuts in the fish can be made, than possible so far.

The mouth access providing means (2) further comprises sensor means (7) for detecting the location of the mouth (4) of said fish (3) and adjustment means (8) for adjusting the position of the mouth penetrating means (5) or the fish (3) in relation to output from the sensor means (7). A method for enabling that fish (3) can be processed through the mouth (4) is also disclosed.
