A cutting tool, such as a kitchen knife, has a handle with an outer grip surface. A blade extends from a distal end of the handle along a central axis. The blade is formed of a metal material and has opposing first and second side surfaces that converge to a cutting edge having a plurality of continuous segments separated by a series of spaced-apart channels. Each channel is formed by an interior sidewall that extends into a body portion of the blade from the first side surface to the second side surface. Each of the channels has a channel width extending in a direction along the cutting edge, and a channel depth orthogonal to the channel width. The channels are formed using a cold forging operation on the first side surface to provide localized work hardened portions of the metal material adjacent the respective channels.

A portable sharpening apparatus is described. The sharpening apparatus includes a body portion and a cavity formed in the body portion for receiving an object to be sharpened. A rotatable abrasive drum capable of sharpening and having an axis of rotation is provided and the abrasive drum is located in the body portion. The apparatus further comprises a motor arranged to drive the abrasive drum and a mouth communicating with the abrasive drum and arranged in the body portion so as to direct an object to be sharpened towards the abrasive drum, wherein the mouth has a supporting means for locating an object to be sharpened at the abrasive drum, the supporting means being such that, when in use, an object to be sharpened is orientated along an axis substantially perpendicular to the axis of rotation of the abrasive drum.

The knife sharpener also has a third stropping stage with at least one rotating stropping disk containing abrasive particles of less than 1 thousandth of inch diameter and a knife angle guide to position the blade's facet at a third relative angle larger than the first and second angles as it contacts the rotating surface of the stropping disk. The rotating sharpening and stropping disks are displaceable from a rest position against specific restraining forces when contacted by the edge facet being sharpened or stropped.
