This invention provides a method to control banana and plantain quality by providing packaging in laser microperforated plastic bags having registered microperforation arrays to allow for transmission of oxygen, carbon dioxide, and ethylene gases into and out. The method improves even ripening of the bananas and plantains, extends green life and yellow life of the bananas and plantains, controls dehydration and reduces crown mold and pedicle withering of packed bananas and plantains during transport and storage.

To control the ripening of bananas in industrial banana processing, a group of bananas that have been harvested is obtained. The group of bananas has a plurality of bananas attached at a common crown. A first portion of the bananas of the group is placed inside of an ethylene-permeable container. A second portion of the bananas of the group is kept outside of the container. The group of bananas is exposed to ethylene gas, where the first and second portions of bananas are exposed to ethylene gas at approximately the same time to initiate ripening of the first and second portions of bananas at approximately the same time. The first and second portions of bananas are allowed to begin ripening. As the bananas ripen, the container regulates the flow of oxygen into the container and carbon dioxide out of the container such that the first portion of bananas inside of the container are exposed to lower oxygen levels and higher carbon dioxide levels than the second portion of bananas outside of the container, to reduce the ripening rate of the first portion of bananas compared to the second portion of bananas.

Described is a packed at least blanched mushroom product in which the amount of moisture present is restricted to, preferably, 80-90 wt% of the quantity of moisture present after blanching. The mushrooms and/or the moisture may comprise a preservative like citric acid. The mushrooms in a preferred embodiment are washed and sliced prior to blanching. A method is described of packing mushrooms ready for use. The mushrooms are inserted into a container (20) after the customary treatments, such as rinsing, cutting if desired, blanching and cooling, and subsequently the gas surrounding the mushrooms (22), such as air, is removed from the container (20), and the container (20) is closed. The removal of the gas surrounding the mushrooms, such as air, from the container (20) may be effected, on the one hand, by establishing an evacuated environment. On the other hand, it may be effected by removing the gas surrounding the mushrooms, such as air, and replacing with a gas atmosphere which is inert to the mushrooms. An inert gas atmosphere may be chosen from carbon dioxide, nitrogen or mixtures of said gases. The container (20) may comprise a bag-shaped container made of plastic or a container having at least a slightly rigid self-supporting plastic section.
