Disclosed are acid- and bile salt-resistant Lactobacillus isolates having the ability to lower cholesterol. The present Lactobacillus isolates or their sub-cultured offspring or mutants derived therefrom can be used in the preparation of various food products, and in the manufacture of medicaments for use in the treatment or prevention of gastrointestinal diseases and for use in lowering serum cholesterol.

PROBLEM TO BE SOLVED: To provide an acid- and bile salt-resistant Lactobacillus isolate having the ability to lower cholesterol. SOLUTION: The Lactobacillus isolate (Lactobacillus gasseri) is obtained from feces of infants as an origin and resistant to gastric fluid and bile acid and provides excellent cholesterol degradation. The isolate exhibits the high ability to lower cholesterol as compared with that of L. acidophilus ATCC (American Type Culture Collection) 43121, ATCC 4356 and DDS-1. A subcultured offspring of the isolate or a mutant derived therefrom can be used in the preparation of various foods and production of medicaments for treatment and prophylaxis of gastrointestinal diseases and lowering of the serum cholesterol. The method for carrying out freeze storage of a microorganism or a cell is to immerse the microorganism or the cell in a solution containing the inulin type fructan and then freeze or lyophilize the microorganism or the cell.
