    Abstract: PURPOSE:To produce a proteinous food having uniform quality, excellent taste and flavor, agreeable feeling to the tooth and high expansion degree, by kneading a protein raw material mixture containing a sulfur-containing compound as an expansion agent with an extruder under high temperature and pressure, extruding the kneaded mixture and optionally pulverizing the extrudate. CONSTITUTION:A mixture containing a protein raw material such as defatted soybean, 0.01-2.0wt% sulfur-containing compound (e.g. sulfite) based on dried weight of the protein raw material and water is kneaded with an extruder under high temperature and pressure condition, extruded and optionally pulverized. A proteinous food having uniform quality, excellent taste and flavor, agreeable feeling to the tooth and high expansion degree can be produced by treating a protein raw material mixture containing a sulfur-containing compound as an expansion agent with an extruder.

    Abstract: PURPOSE:To obtain a roasted vegetable having good flavor, by heat-treating a vegetable in a twin-screw extruder. CONSTITUTION:A fat or oil is added to a vegetable, and then the resultant mixture is heat-treated in a twin-screw extruder. Leaf vegetables, steam vegetables, flower vegetables, fruit vegetables, root vegetables, etc., may be cited as the vegetable to be used. The vegetables are thoroughly washed to remove unnecessary parts of periderms, cores, etc., for use. Either one of vegetable fat and animal fat may be used as the fat or oil. The amount of the fat or oil to be added is preferably 0.3-300wt% based on the raw material vegetable. The amount of water to be added can be variously selected according to the use, but is preferably up to about 300wt%. Any type of twin-screw extruders having the basic characteristics of transfer function of raw materials with a high water and high oil content and mixing, compressing, pulverizing, heating and liquid injecting function in the course etc., may be used.

    Abstract: PURPOSE:To prepare a ''koji'' having a very powerful enzyme activity with a slight contamination by various germs efficiently in a short time, by kneading a modified raw material for preparing the ''koji'' with a seed ''koji'' mold, molding the kneaded material into a given shape, and cultivating the ''koji'' mold. CONSTITUTION:A raw material for preparing a ''koji'', e.g. rice, wheat, defatted soybean or corn starch, is modified by the conventional method, e.g. boiling, and adjusted to a moisture content of 30-45% and pH6-7.5. The adjusted raw material is then kneaded with about 0.08-0.1%, based on the (dried) raw material for preparing the ''koji'', commercially available seed ''koji'' mold and molded into a desired shape, e.g. a short cylinder, rod or spiral, and immediately cultivated in a ''koji'' preparing room.

    Abstract: PURPOSE:To obtain the titled ingredient showing taste similar to meat when it is immersed in water or hot water, obtained by kneading a protein-containing substance with water, orientating it in a hot and plasticized state, applying shear stress to the orientated material so that it is deformed into a state of a flattened dried cuttlefish. CONSTITUTION:A protein-containing substance is kneaded with water to give a mixture, which is orientated by applying shear stress to it in a hot and plasticized state with transporting it. The orientated material extruded into a sheet or rod shape is cut into a proper length, shear stress is applied to it by a roller having a flat surface, etc. in a softened state, so that displacement is produced between the orientated faces of the orientated material, and it is processed into a state of flattened dried cuttlefish. The prepared ingredient has tissue of mass like edible meat, and laminar state orientated in a fibrous state in the tissue.
