摘要： PROBLEM TO BE SOLVED: To provide a method for ozonolysis of an unsaturated fatty acid and a derivative thereof, and to provide the use of catalase for removing reactive oxygen species from a reaction mixture including the ozonolysis product of the unsaturated fatty acid.SOLUTION: The method for ozonolysis includes (a) a step to conduct ozonolysis of a fatty acid or a derivative thereof in an organic phase including an organic solvent, and (b) a step to bring the organic phase into contact with an aqueous phase including catalase and preferably a buffer solution, wherein the fatty acid or the derivative thereof has a ≥8C linear chain.
