본 발명은, 농식품의 과냉각 저장이전에 감마선으로 살균처리 후 과냉각을 실시하여, 농식품의 품질을 최대한 유지하며 저장기간을 늘리는 농식품 저장방법을 제공하는 것이다. 이러한 과제를 해결하기 위한 본 발명의 일실시예에 의한 과냉각 저장방법은, 농식품을 살균 처리하여 농식품의 호기성 세균을 살균하는 단계 및 상기 살균처리 된 농식품을 과냉각 저장고에 저장하여 과냉각시키는 단계를 포함한다. 이와 같은, 저장방법에 따라서 호기성 세균의 농도를 낮춰 핵형성을 억제하고, 식품의 저장품질을 높일 수 있다.

PROBLEM TO BE SOLVED: To provide a method for processing a perishable edible plant into a food by which cells of the edible plant and microorganisms are exterminated and simultaneously decomposed by an autolysin and components unfavorable for the food (harshness, bitterness, astringency, a grassy smell, etc.), can converted into Umami, sweetness and aroma. SOLUTION: An aqueous solution having a higher osmotic pressure than that of the perishable edible plant to be an object is prepared, heated and kept in a prescribed temperature region for exterminating most of cellular tissues of the edible plant and microorganisms sticking thereto, on the other hand, without substantially inactivating the autolysin in and the outside of the cells of the edible plant. The resultant heated aqueous solution is brought into contact with the edible plant to be the object by dipping or spraying to thereby exterminate most of the cells of the edible plant, cause the decomposition thereof with the autolysin and carry out pasteurization. The edible plant is then processed into the food, brought into contact with a cooling liquid and subsequently processed into the food after cooling or frozen and preserved and then processed into the food.

A plasmid vector characterised in that it comprises as least: - the xy/E gene coding for the synthesis of catechol 2,3-oxygenase, and - a promoter of the functional expression of the xy/E gene in a Gram bacterium. The bacteria transformed with the aid of these plasmids can be employed for cloning DNA and also for the synthesis of catechol 2,3- oxygenase.
