    摘要: A cryogenic food product freezing tunnel including an elongated housing having a food product entrance at one end, a food product exit at the other end, a food product conveyor extending through the tunnel, a cryogen input near the food product exit, an exhaust stack near the food product entrance with an exhaust blower atop the stack, a plurality of cryogen circulating fans spaced along the length of the tunnel, a variable speed directional blower intermediate the cryogen input and the food product entrance, a cryogen input control, and a temperature sensor positioned between the directional blower and the cryogen input. The improved cryogen gas flow control system of the invention comprises a variable speed drive for the exhaust blower and a blower speed control, connected to the temperature sensor, that varies the speeds of both the directional blower and the exhaust blower as functions of the temperature sensed by the temperature sensor; the blower speed control is also a part of the cryogen input control, and varies the cryogen input, again as a function of the sensed temperature.

    摘要: A high speed slicing machine supports first and second food loaves for movement along parallel loaf paths into a slicing station where both loaves are sliced by one cyclically driven knife blade; the slices are stacked or shingled in groups on a receiving conveyor located below the slicing station. Independent loaf feed drives are provided; slices cut from one loaf may be thicker than slices from the other. The machine combines manual and automated mechanisms to load food loaves onto the food paths. These mechanisms share a central barrier that is used only during loading; at other times the barrier is clear of the loaf paths. The automated loaf loading mechanism has a sweep to push one or more loaves onto a support defining the loaf paths. There are two grippers, one on each loaf path; each grips the end of a loaf remote from the slicing station. For each gripper, a loaf feed drive impels the gripper (and loaf) toward the slicing station and then moves the gripper back to a home position, releasing an unsliced loaf butt on the way through a door opening in the loaf support. Each loaf feed drive includes two "short" conveyors driven at the same speed as the gripper. The loaf support is pivotally movable to a cleanup position; in its normal support position the loaf support masks the grippers, the loaf feed drive, the barrier, and the sweeps, but in cleanup position it exposes them all.

    摘要: A mold station of a food patty molding machine in which a food pump pumps a moldable food product through a fill passage into mold cavities in a cyclically reciprocating mold plate, with a multi-orifice plate interposed in the fill passage and a stripper plate, slidably mounted immediately adjacent the orifice plate, having a multiplicity of fill openings aligned one-for-one with the fill orifices; a stripper plate drive, synchronized with the mold plate drive, slides the stripper plate a short distance to a seal-off location once in each mold plate cycle. The spacings between fill openings in the stripper plate are made large enough to close all of the fill orifices when the stripper plate is moved to its seal-off location; the stripper plate drive shifts the stripper plate to its seal-off location before movement of the mold plate toward its discharge position can create an open outlet path from the food pump through the mold cavities to outside of the mold station.

    摘要: A machine for molding hamburger patties and other similar food patties, of the kind incorporating a vacuum-intake plunger-type food pump that pumps food product from a supply hopper into mold cavities in a reciprocating mold plate, is equipped with a hydraulic drive system that drives both the food pump and a pair of feed screws that impel the food product toward the pump intake. The feed screws axes are approximately parallel to the direction of travel of the plunger and the outlet end of the feed screws is enclosed to preclude reverse movement of food product from the food pump into the supply hopper at the beginning of the pumping stroke; rotation of the feed screws is timed to coincide with the intake stroke of the pump in an arrangement that can be made to compensate for variations in pumped volume of the food product. A single hydraulic pump provides both a low-pressure hydraulic supply for plunger advance and a high-pressure hydraulic supply for plunger retraction and feed screw rotation. One electric motor powers both the hydraulic pump and a mechanical drive for the mold plate.

    摘要: A versatile high speed slicing machine moves first and second food loaves along parallel loaf paths into a slicing station where both loaves are sliced by a cyclically driven knife blade. There are independent loaf feed drives so that slices cut from one loaf may be thicker than slices from the other. The conveyor/transfer system onto which food loaves are deposited as cut includes a receiver located below the slicing station; a lift mechanism moves the receiver down during slicing so that slices always fall about the same distance after being cut. The receiver includes a horizontal conveyor that periodically discharges groups of food loaf slices onto a deceleration conveyor, from which the groups are fed onto a multi-belt scale conveyor. The scale conveyor is aligned with two receiver grids, each grid including plural grid elements interleaved one-for-one with the scale conveyor belts. In each machine cycle a group of food loaf slices is deposited on a grid and weighed. Two slice groups are usually weighed individually and simultaneously. The group weights control two classifier transfer conveyors.

    摘要: A food patty molding machine of the kind in which a food pump pumps a moldable food product through a fill passage into the mold cavities of a cyclically operable mold plate, with a multi-orifice plate interposed in the outlet end of the fill passage to distribute the food product throughout substantially the entire surface area of each mold cavity during filling. The fill orifices are aligned in parallel rows with equal center-to-center spacing between orifices; a stripper plate is slidably mounted immediately adjacent the orifice plate and has a multiplicity of fill openings aligned one- for-one with the fill orifices as extensions of those orifices. A stripper plate drive, synchronized with the mold plate drive, slides the stripper plate through a distance equal to the center-to-center spacing of the orifices once in each mold plate cycle to sever and re-position food fibers caught on the upstream side of the stripper plate so that those fibers are fed into the mold cavity in the next machine cycle.

    摘要: A cryogenic food product freezing tunnel comprising a stationary structure including an entrance end housing section, a tunnel housing cover, and an exit end housing section, a conveyor to transport food products through the tunnel housing, a spray header to spray a liquid cryogen onto the food products near the exit end of the tunnel, and an exhaust plenum to exhaust cryogen gas from the entrance end. The base of the tunnel housing is a series of U-shaped modular units arranged end-to-end and suspended from the stationary structure by individual hydraulic elevators, movable between a lowered, open service position and a raised position sealed against the housing cover and the end housing sections. Each end base unit is lowered outwardly and downwardly to its service position and is raised along the same path; the base units are lowered in predetermined sequence, end units before center units, and are raised in the reverse sequence. The base units are held sealed to the stationary structure by constant pressure applied by the elevators, using double-bulb silicone gaskets with bonded polyfluoroethylene coverings. Each base unit includes plural sub-modules joined by shielded external expansion slip joints with a continuous interior sheet metal covering. The cover is of modular construction with polyfluoroethylene coated silicone gaskets of clothes-pin configuration between modules. The spray header is a large tube with liquid discharge nozzles below and gas relief nozzles above; excess liquid cryogen is collected in a very long pan below the header and the upper run of the conveyor belt is guided down and up very mild inclines to skim the surface of liquid cryogen in the pan. Insulated doors on the ends of the tunnel and an automatically controlled exhaust damper permits standby for extended periods. The conveyor belt supports are also of sub-modular construction.

The discharge end of the conveyor belt is a stacking station at which the belt engages a nose sprocket and an idler sprocket both mounted on a shuttle reciprocably movable parallel to the conveyor path; when each layered object reaches an alignment stop at the end of the stacking station, the shuttle is shifted rapidly toward the input end of the conveyor, abruptly shortening the discharge end of the conveyor and dropping the object onto a stack accumulator below the shuttle with no change in orientation.
