Heat exchange devices (30) and methods of using same are provided. In a general embodiment, the present disclosure provides for heat exchange devices (30) that are cooling devices having a double helical coil (32) in a phase-mixing-cooling section, a helical coil (36) in a phase-separation-cooling section, and a back-pressure valve (34) intermediate the two coils (32,36). The cooling devices provide maximum extraction of the heat content from a heated food product using a direct-injected liquid cryogen, and complete separation of the gaseous cryogen phase from the cooled product, while avoiding the formation of a stable foam. Hybrid direct-indirect cooling devices are also provided, as well as methods for using same.

Method for producing tomato paste and powder using both reverse osmosis and evaporation. A tomato juice is separated into a juice and a first pulp. The juice is clarified with a centrifuge and/or filter to produce a clarified juice and a second pulp component. The clarified juice is processed with reverse osmosis to produce a pre-concentrated juice by removing a first portion of water. The pre-concentrated juice is provided to a multi-effect evaporator, which removes a second portion of water to form a concentrate. Thermal vapor recompression can be used to recycle steam that is used during evaporation. The concentrate is mixed with the first pulp component or a pulp mixture to produce an intermediate paste, which is processed to produce a tomato paste by combining juice and pulp components. Tomato powder can also be produced.

Disclosed is a modified cocoa powder prepared by extracting a cocoa powder containing water-soluble solids with water to remove a substantial portion of the water-soluble solids. Generally, the extraction level is from about 5 to about 60. The resulting, water-extracted cocoa powder is useful in preparing multi-layered, gel-based dessert products, such as puddings, having a first gel-based layer and an adjacent second gel-based layer, at least one of the layers containing the water-extracted cocoa powder.
