The invention relates to a device for portioning flowable food products, consisting of: a first group of cylinders (1) comprising pistons (3) which communicate with a chamber (5) having an inlet (5a) and an outlet (5b); a second group of cylinders (2) comprising pistons (4) which communicate with a chamber (6) having an inlet (6a) and an outlet (6b), and dispensing means. Said dispensing means are controlled by synchronisation and control means in order to: alternately communicate a food product inlet (9) with said chamber (5) whereby the cylinders (1) open the inlet (5a) and close the outlet (5b) thereof; and simultaneously communicate an outlet (10) with said chamber (8) whereby the cylinders (2) close the inlet (56a) and open the outlet (6b) thereof and vice versa. Fluid dynamic cylinders (26) actuate each piston (3, 4) consecutively or actuate on sub-groups of pistons (3, 4) consecutively in order to empty the cylinders (1, 2).

The invention relates to a head having multiple retractable needles for injecting pieces of meat and the injecting needle for same, said head comprising a liquid supply chamber. Injecting needles (4) extend through the supply chamber. Said needles are provided with a penetration point (14), a passage (12), which communicates with the injection openings (15) located close to the point (14), and distal end (18), far from the point (14), which is provided with a limiting piece (17). The distal end (18) is disposed opposite elastic retaining means that can be used to draw the needle back if said needle comes into contact with a bone in the piece of meat to be injected. The supply chamber comprises numerous parallel, interconnected and elongated conduits (3) through which certain sections (4a) of the needles (4) can be guided to slide. Said conduits (3) are provided with a diameter greater than that of said sections (4a) and means (5) for sealing and guiding/centring said sections (4a) at the inlet and outlet of each conduit (3). The needles (4) comprise opposing openings (13) which communicate with said passage (12), said openings (13) being disposed in an area of said section (4a) at a distance from the limiting piece (17) that is approximately equal to the length of the conduit (3).

An automatic stripping machine for meat products such as hams or other meat products which have been previously baked in a mold and compressed by a lid inserted in the mold and provided with at least a crosspiece mounted in a floating arrangement on two or more columns integral with the lid, with interposition of a resilient device and arms having a toothed profile for locking the lid to the mold, being hinged on one end of the crosspiece and having one of their teeth locked under an external rim which surrounds the mold opening. The machine carries out in a sequential and automatic way the operations of sequential feeding of the molds filled with the meat product and closed with a lid; identifying the number of lid locking arms for the purpose of subsequently removing the lid; removing the lid from the mold; stripping the product from the mold; and separately discharging the product and the empty mold.

Both apparatuses have a valve body (1) with a cavity (2) having a first radial opening (3) connected to an inlet conduit (6), a second axial opening (4) connected to a metering chamber (7), and a third radial opening (5) connected to an outlet conduit (8), a plug (9) rotatably arranged inside said cavity (2), and a driver (10, 11) for moving the plug (9) between first and second positions. The plug (9) has an outer surface (12) and an oblique surface (13). In the first position, the oblique surface (13) faces the first and second openings (3, 4) and the outer surface (12) shuts the third opening (5), and in the second position, the oblique surface (13) faces the second and third openings (4, 5) and the outer surface (12) shuts the first opening (3).

An automatic plant for the treatment and packing of meat product, including an injection station for injecting brine into a meat product, first and second maceration stations for macerating the injected meat product, and a packing station for packing the treated meat product. The injection station is connected to the first and second maceration stations by an accumulating and loading unit for accumulating meat product coming from the injection station and selectively loading it into the first and second maceration stations which are connected to the packing station by a transfer unit adapted for transferring the meat product from the first and second maceration stations to feed hoppers for feeding the packing station. The plant is controlled by computerized control.

The invention relates to a system and method for the immersion cooking/cooling of food in diffused forced convection. The inventive system comprises: a tank for housing the food to be cooked/cooled, filling/emptying means for filling the vessel with a cooking or cooling liquid and emptying same, and heating means for heating the liquid. The tank comprises a lower region and an upper region, and circulation means which are intended: (i) to collect liquid from the lower region by means of various outlets in a first lower side wall and to introduce said liquid into the upper region through various inlets in a first upper side wall, and (ii) to collect liquid from the upper region by means of various outlets in a second upper side wall and to introduce said liquid into the lower region through various inlets in a second lower side wall, thereby generating diffused forced convection in a turbulent flow.
