A non-chemically inhibited starch is prepared by controlled heating at a specified pH of an aqueous suspension of an amylose-containing starch in intact granule form and an inorganic salt effective in raising the gelatinization temperature of the starch.

The further modification of acid modified flours and starches by reacting such acid modified flours, at a pH of less than about 3.0 with an alkylene oxide, preferably ethylene oxide, in order to scavenge residual acidity, raise the pH of the product and partially crosslink it. The thus created new crosslinked product is useful in gypsum wall board core binders and other applications.

THIS INVENTION RELATES TO A PROCESS FOR PRODUCING ANYLOSE CHIEFLY COMPOSED OF MACROMOLECULAR AMYLOSE FROM STARCH RICH IN AMYLOSE BY HEAT GELATINIZING THE STARCH AND THEN RAPIDLY COOLING TO A TEMPERATURE IN THE RANGE OF 5060*C. AND TREATING WITH A HEAT-RESISTANCE A-1,6-GLUCOSIDASE. THE REACTION MIXTURE IS THEN FURTHER COOLED TO A TEMPERATURE OF 40-50*C. AND TREATED WITH A SECOND A-1,6GLUCOSIDASE IN ORDER TO COMPLETE DEBRANCHING OF THE AMYLOPECTIN THEREIN AND PERMIT PRECIPITATION OF THE AMYLOSE. THE RESULTANT MACROMOLECULAR AMYLOSE MAY THEN BE SEPARATED THEREFROM.

THE TREATMENT CONDITIONS AND PROPORTIONS OF INGREDIENTS ARE SO SELECTED TO CAUSE FROM 0% TO ABOUT 75% OF THE WAXY STARCH GRANULES TO BECOME FRAGMENTED, AND THE NON-FRAGMENTED GRANULES TO BE NON-BIREFRINGENT. AFTER TREATMENT THE SLURRY ID COMBINED WITH ADDITIONAL ORGANIC LIQUID, AND THE PROCESSED STARCH IS THEN RECOVERED.
