摘要: A method for treating a product suitable for human consumption, for example, a meat product, such as slaughtered poultry or parts thereof, in which a large number of products are successively supplied, optionally in groups, to an inspection station in which each product is subjected to a visual inspection to detect a defect on the respective product. If a decision is made to provide a specific additive-addition treatment to a product, the product is supplied to an additive-addition station, where the product is subjected to an additive-addition treatment and an additive is added to at least one part of the outside of each product or the inside of each product.

摘要: The invention provides methods and moulding devices for moulding three-dimensional productions from a mass of foodstuff which is suitable for human consumption, in particular from a mass of meat, in particular chicken. The method comprises filling a mould cavity with a portion of the mass and for a filling period via a filling opening associated with the mould cavity, closing the filling opening of the mould cavity and holding the mass in the mould cavity for a fixing period. Then, the mould cavity is opened and the moulded product is removed from the mould cavity. The method uses fixing-pressure-exerting mechanism designed to exert a fixing pressure which acts on the mass in the mould cavity after the filled mould cavity has been closed.

摘要: In a device, assembly and method for separating meat from bone parts, at least a chamber (2) is provided for receiving bone parts which are connected to meat, having a first open end (4) and a second open end (5) which is located opposite the first open end (4), a plunger (7), first displacement means for displacing the plunger (7) inside the chamber (2) from the first open end (4) thereof, and a stop element (13) at the second open end (5) for creating a closed space (3) together with the chamber (2) and the plunger (7). A pressure is applied to the bone parts by displacing the plunger (7) in the chamber (2). The stop element (13) is arranged at a distance from the chamber (2), so that at least one gap (15) is formed between the chamber (2) and the stop element (13), for the passage of meat which has been separated from the bone parts under the influence of pressure.

摘要: A method is described for processing poultry, comprising the steps of supplying live poultry, stunning the live poultry in a stunning device, placing the stunned poultry into product carriers advanced along a conveyor, killing the poultry and removing the feathers from the dead poultry in a plucking device. Downstream of the plucking device, the poultry is exposed to an electrical stimulation, an electrical voltage (V1) being applied across the carcass of the poultry. A method is further described for controlling process parameters, especially the time and duration of execution of working steps in a process of mechanized working of slaughtered poultry, the tenderness of a specified meat portion being evaluated prior to a due processing step and, after this evaluation, the important process parameters for the particular processing step being set to an optimal value.
