Abstract: Sorbic acid is prepared by splitting the ketene/crotonic aldehyde polyester in the presence of a macro-reticulated exchange resin having a pore diameter of at least 200 A on the average and a water content of less than 20 percent by weight. The process can be carried out discontinuously or continuously with a good yield, the sorbic acid obtained having a high quality.
