摘要: A fryer and method for cooking food products is provided that automates the movement of baskets carrying the food products. The fryer) includes a cooking chamber with a heating element located therein for heating cooking medium in the cooking chamber. The fryer also includes at least one vertical transport assembly that selectively engages with and moves the basket vertically into and out of the cooking medium. A horizontal transport assembly selectively engages with and moves the basket horizontally between different positions. The horizontal transport assembly hands off the basket to and from the vertical transport assembly, and first and second hooks on the horizontal transport assembly engage with front and rear receiving mechanisms on the basket to continuously maintain at least two points of contact with the basket. This allows for controlled pivotal movements of the basket when food products are to be added or removed from the basket.

摘要: The invention relates to a air-based fryer apparatus (100) including a shield (101) for use in a cooking apparatus (100) having a food preparation chamber (102) to receive a food support (103), a system (104) for circulating a flow of hot air inside the food preparation chamber (102) and a heating element (105) to heat at least the circulated air. The shield (101) is configured to be disposed between the heating element (105) and the food support (103). The shield (101) comprises a plurality of inclined surfaces (112) and a plurality of apertures (111) between the inclined surfaces (112) through which the flow of hot air can pass, wherein the inclined surfaces (112) are adapted to block a direct line of sight through the apertures (11) in the shield (101) from the heating element (105) to the food support (103) to prevent air flowing from the food support (103) to the heating element (105) through the apertures without being defelected by the inclined surfaces. The invention allows, among various advantages, reducing fumes generated by an air-based fryer during cooking process.

It is suitable to decrease the time of food cooking and the hand burden. Therefore, the chefs can have more time to produce pre-treatment or post-production.

摘要: Method of collecting used cooking oil includes extracting used cooking oil from at least one deep fryer to a container, storing and separating said used cooking oil within the container which is located within the cooking area. The oil from the deep fat fryer is periodically pumped to the container and allowed to settle. The unwanted sludge is then tapped off into a portable container and the wanted oil is pumped to an exterior transportation container. The container is triangular shaped with rear walls converging into a corner of the cooking area and a diagonal front face with side flanges and a bottom flap such that it is located in the corner of an interior wall of a building and contains the pipes and plumbing.
