A slicing machine comprising a rotatable circular cutter blade, a reciprocatable feed carriage to carry stock to be sliced by the cutter blade, and a receiving device to receive slices severed by the cutter blade from such stock. The receiving device is coupled to the feed carriage to be angularly displaced in co-ordination with the reciprocation of the feed carriage and is provided with a plurality of spikes to project from a slice receiving surface of the receiving device by an amount sufficient to enable a plurality of severed slices to be stacked on the receiving device, which is further provided with stripper means to strip such stack of slices off the spikes.

Means are provided for rotating the carriage and for rotating the knives as they are gyrated about the central axis by the carriage. A feed chute for the food product is arranged substantially vertically above the plane of the knives and eccentrically of the central axis. Feeding means in the feed chute positively suspends the food product in the feed chute and incrementally lowers the food product each time that a slice is sliced therefrom by the rotating and gyrating knives. Slice collecting means are arranged below the plane of the knives in substantial alignment with the feed chute for collecting the slices of the food product as they are sliced by the rotating and gyrating knives.

A slicing machine includes a feeder for feeding a bacon belly into a continuously rotating slicing blade thereby forming slices of bacon which are deposited in shingled fashion on a continuously moving conveyor supported on a scale. When a prescribed weight of the shingled bacon is registered by the bacon weigh scale a signal is fed back to the feeder to momentarily stop the advance of the bacon belly and consequently the formation of bacon slices. This interruption segregates one shingled bacon group or draft from the next for subsequent processing and packaging. In order to achieve a more uniform slice count per 1 pound package, regardless of cross-sectional size of belly, sliced thickness is altered by sensing the crosssectional size of the bacon bellies at the time and during slicing. An interposed check weigher scale supports a conveyor which receives each draft of shingled bacon slices initially weighed by the bacon weigher scale. Should the weight of this draft be above or below the prescribed weight, a signal is fed back to a servo motor which automatically changes the set point for the bacon weigher scale. The check weigher scale also generates a signal for a reject conveyor which receives the draft of sliced bacon transferred by the check weigher conveyor. Drafts within the prescribed weight tolerance are accepted and transferred to the packaging station by a take away conveyor. An automatic cardboard dispenser is interposed between the reject conveyor and the check weigher conveyor for placing each weighted draft on a card.

A food-cutting machine for slicing and shredding foodstuffs with semiautomatic feed is disclosed in which a spring-loaded mechanism coacts with a pusher in a chute or hopper having a plurality of rollers on the bottom to feed foodstuffs into a manually rotated reversible cutting disc for slicing, shredding and comminuting foodstuffs. A bayonet fastener for the reversible cutting disc firmly supports the disc against the pressure of the spring-loaded pusher and hopper. The principal parts including the hopper and rollers, deflector, and discs are all removable without the use of independent fasteners, for quick assembly and disassembly as well as cleaning. Two reversible discs are provided which will perform different cuts on each side, thus providing four types of cuts; namely: slicing, grating, julienne and ripple cuts. A suction base with a stop limited knob is shown which limits actuating travel to 180*.
