摘要: An automated pizza making system and method for rapidly and efficiently preparing a pizza utilizing computer controlled components. The system includes a platform moving assembly for moving and rotating a pizza crust, a sauce dispenser assembly for dispensing a sauce on the pizza crust, a cheese dispenser assembly for dispensing cheese on the pizza crust, and a slicer assembly for slicing food items and dispensing the sliced food items on the pizza crust. A time-of-flight sensor can be utilized to scan the pizza crust for determining the amount or placement of ingredients on the pizza crust. A weight sensor can be utilized for determining the amount of ingredients placed on the pizza crust. A computer system can be utilized to execute a user's orders and control all the electrical components based on pizza parameters entered by the user in an automated mode, with minimal human assistance.

摘要: A roll-type pizza may include a generally cylindrical spiral roll of an unbaked sheet of dough. A layer of olive oil may predominantly cover the first surface. A layer of red sauce may predominantly cover the layer of olive oil. A layer of mozzarella cheese may predominantly cover the layer of red sauce. A layer of chunk pepperoni may at least partially cover the layer of mozzarella cheese. The dough and layers of pizza ingredients may be rolled in a spiral manner to form an uncooked roll-type pizza. The roll-type pizza may be coating or dunked in butter. Parmesan cheese, garlic powder, garlic, salt, or oregano may be added on to the roll-type pizza. The roll-type pizza may be frozen, packaged, and stored for subsequent baking and serving.

摘要: An apparatus for cutting slices from a food product includes a vertical housing defining a barrel that receives an elongated food product. A rotatable blade apparatus is disposed beneath the lower end of the housing and has a planar guide with a slot. A first blade is mounted to the top surface of the guide with a sharp blade edge adjacent the slot and facing radially outwardly. Drive means rotates the rotatable blade apparatus into the food product to form slices. A substrate is disposed beneath the rotatable blade apparatus for receiving slices formed by the rotatable blade apparatus. The substrate may be a pizza crust and the food product may be a pepperoni stick.

摘要: A method of making a flour for pizzas and pastas has the steps of extracting coconut water from a coconut, drying the meat of the coconut at a temperature between 4° C. in 10° C. until the meat is dry, and crushing and grinding the dry meat so as to produce a gluten-free flour. In order to make a pizza, the coconut base flour is mixed with an approximately equal proportion of water, kneaded and heated. The flour for the pizza will include approximately 51.5% of the gluten-free coconut flour.

摘要: The present disclosure relates to dough and dough-based food products having a unique appearance and texture. In a general embodiment, a dough is provided and includes at least one enzyme having an enzyme activity level sufficient to provide the dough with at least one characteristic selected from the group consisting of a water absorption ranging from about 58% to about 64%, a fermentation after about 90 minutes, retention of gas cells after sizing and/or baking the dough, good viscoelastic properties after baking the dough, or combinations thereof. The dough may also include the use of a specifically sourced malted barley flour at a level that is not recommended by the baking industry and/or processing parameters that reduce the fermentation time of the dough. Methods for making a dough are also provided.

摘要: An automated pizza oven assembly includes an oven that has an entry and an exit. A conveyor extends through the entry and the exit, and a pizza is positionable on the conveyor. The conveyor transports the pizza through the oven to cook the pizza. A cutting unit is coupled to and extends away from the oven such that the cutting unit is positioned above the conveyor. The cutting unit includes a plurality of blades and each of the blades radiating outwardly from a central point of the cutting unit. The blades are urged downwardly onto the pizza when the cutting unit is turned on to cut the pizza into a plurality of slices. A control unit is coupled to the oven and the control unit is in communication with the heating element in the oven, the conveyor and the cutting unit. The control unit controls operational parameters of the heating element, the conveyor and the cutting unit.
