The invention pertains to a system and method for separating breast meat from at least a part of a keel bone of a carcass part of slaughtered poultry. The system comprises a product carrier and a pair of breast meat cutter blades which are adapted make an incision along the keel bone in the longitudinal direction of the keel bone. The breast meat cutter blades are moveable relative to each other between and open position and a closed position. The system further comprises a blade actuator, which comprises a closing assembly to apply a biasing force to the breast meat cutter blades to bias the breast meat cutter blades towards the closed position, and an opening assembly which to applyan opening force to the breast meat cutter blades to hold the breast meat cutter blades in the open position.

The invention pertains to a method and a corresponding system for harvesting kneemeat and thighmeat from a whole leg poultry product. The method comprises the following steps: - providing a leg product having: - a thigh, - a drumstick, - a knee, - a transverse cut at the knee, extending from the rear side to a cut end adjacent to the rear of the knee cap, the thigh and the drumstick being connected to each other and the knee cap being intact, creating a drumstick side cut plane and a thigh side cut plane, - with the leg product suspended from a poultry product carrier, arranging it adjacent to a counter element, with the drumstick side cut plane facing the counter element, - bringing a knee cap scraper in engagement with the leg product adjacent to the knee cap and the counter element with the leg product at the rear of the knee cap, - moving the knee cap past the knee cap scraper while the counter element engages the leg product at the rear of the knee cap, therewith scraping kneemeat from the knee cap while leaving the kneemeat connected to the thigh, after the scraping step the kneemeat and thighmeat being present on a first side of the knee cap scraper and the knee cap on a second side.

The invention pertains to a system and a method for removing a thigh bone from a defeathered whole leg poultry product, wherein the method comprises the following steps: - providing a leg product comprising: - a thigh, which thigh comprises a thigh bone and thigh meat, - a drumstick, - a knee joint, which knee joint comprises a connection between the thigh and the drumstick, in which leg product, a transverse cut has been provided at the knee joint transverse to the thigh bone and the tibia bone, which extends from one side of the leg product to a cut end so that the thigh and the drumstick are connected to each other, by which transverse cut a drumstick side cut plane and a thigh side cut plane are created, - while keeping the thigh and the drumstick connected to each other, changing the angle between the thigh and thereby exposing the thigh side cut plane, - while keeping the thigh meat and the drumstick connected to each other, removing the thigh bone from the thigh meat via the thigh side cut plane.

The invention pertains to a method and system for harvesting saddle meat parts from a carcass part of slaughtered poultry, wherein the carcass part initially comprises two legs parts and a saddle, wherein the carcass part further comprises two saddle meat parts. The method comprises the following steps: • - separating the leg parts from the saddle meat parts and the saddle, leaving the saddle meat parts connected to the saddle, • - arranging the saddle in a saddle meat harvester (100), • - making the saddle meat parts come to extend from the carcass part, while the saddle meat parts remain connected to the saddle, • - positioning the tissue connection between the left saddle meat part and the saddle in alignment with a left cutter (140) and positioning the tissue connection between the right saddle meat part and the saddle in alignment with a right cutter, • - moving the saddle with the saddle meat parts towards the left cutter and right cutter, and during this moving, providing a resistance force to the saddle meat parts such that the tissue connections between the saddle meat parts and the saddle become taut, • - separating the saddle meat parts from the saddle, said separation being initiated while the tissue connections between the saddle meat parts and the saddle are taut, • - collecting the separated saddle meat parts.

The invention relates to a system and method for processing clusters of poultry viscera, at least comprising a gizzard. The method comprises conveying the clusters of viscera in a suspended manner, pulling the gizzard of each cluster of viscera, while the latter are being conveyed in a suspended manner, over two elongate scraper bodies which rotate about respective rotation axes, each of the scraper bodies comprising at least one scraper element, wherein, due to the rotation of the two scraper bodies, gizzard fat which is present on a gizzard wall is separated from the gizzard by the scraper elements while the gizzard is being pulled, and collecting the gizzard fat which has been separated from the gizzard of the successive clusters of viscera.

The invention pertains to a system and method for measuring a shoulder joint position of a carcass part of slaughtered poultry. The system comprises: -a position measurement device (20), having a mechanical contact member (25) which is adapted to engage at least one shoulder joint (2, 3) during a measurement of the shoulder joint position, and -a product carrier (10) which is adapted to support the carcass part during movement of the product carrier along the conveying path past the position measurement device. The position of the product carrier during the measurement of the shoulder joint position is such that the carcass part is arranged relative to the position measurement device with the left shoulder joint and right shoulder joint one behind the other as seen in the transport direction (11) so as to allow the mechanical contact member to engage a shoulder joint bone structure of a shoulder joint.

The invention relates to a stunning device (1) for poultry, having an elongated stunning space (2) with a poultry feed opening and a poultry discharge opening which elongated stunning space is subdivided in at least two connecting compartments, a controlled anaesthetic gas feed connecting to the elongated stunning space, and a conveyer (9) leading through the elongated stunning space providing a transportation path for the poultry, wherein at least one side of the elongate stunning space is connecting to a transition compartment. The invention also provides a method of operating such a stunning device.
