The present invention concerns a beverage preparation machine (1) comprising: a reservoir (2) for a fluid, a brewing head (3)adapted to receive at least one ingredient capsule (100) comprising at least one beverage preparation ingredient (104), a pump (6) for pumping a predetermined volume of said fluid from said reservoir (2) to said brewing head (3), such that said fluid can be injected into said capsule (100), when said capsule (100) is received by said brewing head (3), to mix with said ingredient (104) under pressure and produce a predetermined volume of beverage, wherein the reservoir (2), the pump (6), and an inserted ingredient capsule (100) in use are in fluidic communication and form a fluid system (800), and wherein the beverage preparation machine (1) further comprises a pressure sensor (301; 302; 303; 304) adapted to measure internal pressure (P) within an ingredient capsule (100) inserted inside said brewing head (3), and a locking mechanism (401) adapted to prevent disconnection of the inserted ingredient capsule (100) from the fluid system (800) if the measured internal pressure (P) exceeds a predetermined threshold pressure value (Pt).

The brewing apparatus (1) comprises a guide and support structure (2), that bears a movable receiving assembly (7) capable of receiving a capsule or similar (10), containing a quantity or measure of a substance for the preparation of a beverage, and a substantially stationary cooperating assembly (6). The movable assembly (7) is able to assume a closed position in which it is coupled with the cooperating assembly (6) to create a brewing chamber, and a separated open position. Between such assemblies (6, 7) there is a gripping device (20) including a pair of movable jaws, capable of assuming a relative retaining position in which they are capable of receiving and retaining a capsule or similar (10) inserted between said assemblies (6, 7) while the latter are in the separated open position. The jaws (21) can be parted by respective pusher members (23) of the movable assembly (7) to release the capsule (10) retained, when the receiving assembly (7) is at least close to the closed position, to allow a capsule (10) to be positioned in the brewing chamber.

La présente invention concerne un dispositif pour l'infusion d'une substance à infuser présentant une chambre d'infusion destinée à recevoir la substance à infuser et à faire passer un flux d'eau sous pression au travers de la substance à infuser, la chambre d'infusion présentant une partie d'entrée (4) d'eau dans la chambre d'infusion et une partie de sortie (2) de boisson infusée, un canal d'injection en communication fluidique, par une extrémité d'injection, avec la partie d'entrée (4) et raccordable, par une extrémité d'admission (39), à un circuit d'eau sous pression, caractérisé en ce qu'il comporte des moyens réglables de variation de la pression d'eau dans le canal d'injection agencés pour générer une différence de pression d'eau entre l'extrémité d'admission (39) et l'extrémité d'injection (40) et commandés par des moyens de commande extérieurs à la chambre d'infusion. The invention relates to a device (1) for preparing a beverage from a substance, which is contained in particular in a capsule, using a liquid medium. The device comprises two chamber parts (5), (6) that can be pressed against one another in a closed position to form a receiving chamber in which the capsule can be locked. Said receiving chamber comprises at least one drainage channel (12) leading from the chamber interior to the chamber exterior, with said channel being disposed on a wall section of one of the chamber parts (5) such that it can be sealed by the capsule (2) and/or by the other chamber part (6) when the closed position is being created.
