A device comprising packaging, in the form of an envelope fabricated from a composite material, impermeable to liquid water, but permeable to gases and containing any one of a number of fill material formulations currently available in commercial, oxygen 'scavenging' food packaging inclusions, which include, as the principal active component, the alternatives of either finely comminuted iron metal, ascorbic acid, calcium ascorbate, sodium ascorbate, sodium erythorbate or finely comminuted palladium metal, being designed to establish and maintain an oxygen free atmosphere within the headspace of bottles, sachets or cartons of aqueous liquid foods and beverages.

The method of growing a fungal insert to placed with food packaging. Mycelium is introduced to a substrate of particles that allows for a network of interconnected mycelia cells that bond the substrate together to form a living, respiring material. This material is then encased in a perforated polymer film to create an insert This can then be placed with fruit and vegetables as they are being packaged. The packaging may be gas permeable, e.g. have two or more small holes cut into the packaging that encases the fruit and vegetables to allow for some gas exchange. The living insert increases the levels of carbon dioxide within the packaging environment slowing the rate of respiration among the fruit and vegetables. Once the packaging is opened it can be resealed and the insert will continue to adjust the levels of carbon dioxide keeping fruit and vegetables fresher for longer.

When a device, such as a porous sachet comprising the compositions is placed in a closed environment of a food package, for example, a constant fresh aroma and/or taste is delivered to the closed atmosphere of the packaged foodstuff and deposited onto the foodstuff per se for preserving and maintaining product freshness for enhanced consumer acceptance. Representative packaged products would include snack foods, such as barbecue chips, potato chips, bakery products, to name but a few.
