Abstract: The present invention relates to the production of yeast strains which ferment sugars more rapidly with a faster production of carbon dioxide and ethanol. The invention comprises the introduction in the yeasts of genes of enzymes which normally do not express in the presence of sugars, under control of promoters which permit their expression in such conditions.
