A method for producing a confectionary product (1), comprises the steps of extruding a confectionary substance to form a confectionary string, shearing an end portion (5) from a remaining part (7) of the confectionary string (2), resting the end portion (5) on a conveying surface (8) already before the separation of the end portion (5) and completing the separation of the end portion (5) from the remaining part (7) of the confectionary string (2) while the end portion (5) is resting on the conveying surface ( 8 ).

A plant (1) for the production of ice cream comprises one or more lines (2) for ice cream production which comprise a cooling portion (4) suitable for the cooling of a mixture of ice cream ingredients, a distribution circuit (5) suitable for sending a refrigerating fluid to each of the cooling portions (4), a refrigeration unit (6) for cooling the refrigerating fluid. The distribution circuit (5) is fluidly independent from the refrigeration unit (6) and in a heat exchange relationship with it, so that the refrigerating fluid can transfer heat to the refrigeration unit (6), and thus be cooled.

A pump unit (10) for emulsifying air into an ice cream mixture comprises a first body (14) and a second body (16) provided with respective first and second cylindrical cavities (20, 22), each having longitudinal axes (20a, 22a) placed parallel to the axis of the other cavity. A cylinder head (18) is provided with cavities (50, 52) located as respective extensions of the cavities (20, 22) of said first and second bodies (14, 16). Both the first cavity (20) and the second cavity (22) comprise a guide portion provided with two guides (28, 30, 36, 38) made of plastic material and extending up to an intermediate point of the respective cavities (20, 22). A product working chamber can extend from said intermediate point up to the respective bottoms (50a, 52a) of the cavities (50, 52) bored within the cylinder head (18).

An ice-cream production plant (10) comprises an ice-cream handling line (12) provided with gripping means (14) for gripping one end of the ice-creams and a ice-cream packaging line (16) disposed downstream of the handling line (12). The handling line (12) releases the ice-creams directly onto the packaging line (16). The speed of the handling line (12) and the speed of the packaging line (16) are controlled to ensure a specific distance between centres of the ice-creams along the packaging line (16). A series of grippers (18) provided with jaws are movable on a handling path along which the jaws rotate from a substantially vertical plane to a substantially horizontal plane.
