Abstract: The present invention concerns a plant (1) for the production of edible oil, comprising one or more kneaders (G) for mixing a paste from which to extract the oil. In accordance with the invention, means (2, 3, 10) are included for operating a calculation of the flow rate of paste in entry/exit into/from said one or more kneaders. Said means (2, 3, 10) comprising an arrangement of weight measurement (2, 3) arranged so as to measure a variation of weight of said one or more kneaders (G) on the basis of the flow of paste in entry/exit into/from the kneader and an electronic processor (10) placed in communication with said arrangement of weight measurement (2, 3) and configured to operate a calculation of the flow rate (P) on the basis of said variation of weight measured in correspondence of the entry/exit of the paste.
