Abstract: The present compositions and methods relate to thermostabilization of phytase with inorganic phosphate and increasing the recovery of phytase during the production of heat-treated food or animal feed pellets that contain phytase. The phosphate is introduced to the solid composition. The phosphate and phytase are in functional proximity and at a molar ratio of at least 50:1. Multi-layered granules are taught.
