A commercial dishwasher for crockery or utensils, which is in the form of a box-type dishwasher (200) or in the form of a conveyor dishwasher (100), wherein the dishwasher has at least one controllable, capacitive deionization unit (50) with an inlet (71) for fresh water and an outlet (51) for demineralized water and a control device (10) which is associated at least with the deionization unit (50). The control device (10) is designed to automatically or selectively automatically adjust, preferably in a regulating manner, at least one parameter which characterizes the operation of the deionization unit (50), specifically depending on at least one parameter which characterizes the quality of the fresh water at the inlet (71) of the deionization unit (50) and/or depending on at least one parameter which characterizes the quality of the demineralized water at the outlet (51) of the deionization unit (50).

A batch dishwasher (1) has a treatment chamber (2) with at least one wash system which is designed as a recirculation system, wherein the treatment chamber (2) has at least two treatment zones (6, 7) in which washware can be treated at the same time but independently of one another, in particular independently of one another in respect of action time, wash and/or rinse mechanics, and/or independently in respect of the selected treatment program. The at least two treatment zones (6, 7) are each realized in such a way that at least one dish rack (5) can be inserted and removed, and wherein the dishwasher (1) has a mechanism for retracting or extending a dish rack (5) into at least one and, respectively, out of at least one of the at least two treatment zones (6, 7) as required.

The invention relates to a dishwasher (1) in the form of a commercial utensil washer or dishwasher which is designed as a batch dishwasher and is realized as a hood-type dishwasher, wherein the dishwasher (1) has a treatment chamber (2) with at least one wash system which is designed as a recirculation system, wherein the treatment chamber (2) has a first treatment zone (6) and at least one further, second treatment zone (7), wherein items ofwashware can be treated independently of one another and at least temporarily at the same time in the first and in the at least one second treatment zone (6, 7).
Abstract:
A method is provided for operating a dishwasher (l)in the form of a batch dishwasher, which has a treatment chamber (2) for accommodating washware to be cleaned. Provision is made, during an adsorption phase, for air to be conducted out of the treatment chamber (2) through a sorption unit (41), which contains a reversibly dehydratable dry material, in such a way that the dry material absorbs moisture from the air stream, wherein the air is then returned to the treaftment chamber (2). Provision is further made, during a desorption phase, for the dry material of the sorption unit (41) to be heated in such a way that moisture is desorbed from the dry material as steam. During the desorption phase, the sorption unit (41) is subjected to forced ventilation only to such an extent that recondensation of desorbed steam in the sorption unit (41) itself is effectively prevented.
