The invention relates to a device for mechanically processing the top surface of a piece of dough. Said device comprises a pressure cup (6) which is provided with a hollow trough (5) for receiving the piece of dough which is to be processed (3). The piece of dough is placed inside the hollow trough (5) by an input device (2) at an input point (4). At a processing point (9) which is spatially offset in relation to said input point, a tool (20) is arranged in a stand (1) in such a way that it can move up and down so that the piece of dough (3) placed in the hollow trough (5) can be processed. When processed, the pieces of dough (3) are arranged on a support (33) at an output point (40) by the pressure cup (6). The pressure cup (6) is rotatably mounted around a longitudinal axis (6) thereof on a pressure cup support (42) which is separate from the input device (2). Said pressure cup support(42) allows the pressure cup (6) to be displaced back and forth between the input point (4) and the processing point (9). The output point (40) is located in the region where said back and forth movements occur.

The invention relates to a method and facility for processing a pasty substance and also relates to a processing workshop. The method is characterized in that, after a fermenting step, the pasty substance is subjected to a new step for mechanically working said substance. Said series of steps is carried out at least once. The facility consists of a first device, for mechanically working and fermenting the pasty substance, and a second device for baking the pasty substance. The means for receiving the pasty substances from the first device is in the form of a vat, and the receiving means of the second device is in the form of at least one hearth (S). Said facility is characterized in that a pre-dividing tool is combined, at least temporarily, with the first device. The invention is of use in the field of culinary preparation.

A plurality of dough pieces (125) are produced using a rotary dough cutter (120) including a shaft (200), a plurality of walls (205) extending radially outward from the shaft (200) and a plurality of interior blades (220) extending radially outward from the shaft (200). The plurality of walls (205) define a plurality of dough cutter molds (210). The plurality of dough cutter molds (210) include a first dough cutter mold and a second dough cutter mold. A first wall of the plurality of walls (205) defines part of both the first dough cutter mold and the second dough cutter mold. Each of the plurality of interior blades (220) is located in one of the plurality of dough cutter molds (210). The plurality of dough pieces (125) are cut from a dough sheet (100) with the plurality of walls (205). The plurality of dough pieces (125) are scored with the plurality of interior blades (220). After scoring, the plurality of dough pieces (125) are proofed and then frozen.

L' invention concerne un procédé et une installation de transformation d'une substance pâteuse ainsi qu'un atelier de transformation. Le procédé est caractérisé en ce qu'après une étape de fermentation la substance pâteuse est soumise à une nouvelle étape de travail mécanique de ladite substance, cette succession se produisant au moins une fois. L'installation se compose d'un premier dispositif pour le travail mécanique et la fermentation de la substance pâteuse et d'un second dispositif pour la cuisson de la substance pâteuse, les moyens de réception de la substance pâteuse du premier dispositif étant sous forme d'une cuve et ceux du second dispositif d'au moins une sole (S) et est caractérisée en ce qu'un outil prédiviseur est associé au moins temporairement au premier dispositif. Application dans le domaine de la préparation culinaire.
