Improved chewing gum formulations and bases, as well as methods of producing chewing gum and bases are provided. The chewing gum includes a structured lipid such as caprenin. The structured lipid can be used in the base and/or gum as a plasticizer. In an embodiment, the structured lipid is added to gum formulations replacing a small or large quantity of other fats, oils, and waxes. A variety of base and chewing gum formulations including caprenin can be created and/or utilized pursuant to the present invention.

A wax-free abhesive chewing gum is provided which uses a gum base devoid or substantially free of wax and elastomer plasticizer. The gum base includes about 20 to about 75 weight percent synthetic elastomer, about 4 to about 45 weight percent filler, about 5 to 55 weight percent gum base softener, and optional minor amounts of miscellaneous ingredients such as colors, antioxidants, etc. The abhesive wax-free chewing gum further comprises at least one flavoring agent, at least one bulk sweetener; and at least one controlled release sweetener. The controlled release sweetener is a sweetener whose release rate has been modified, preferably to provide a sweetness release profile similar to the release profile of at least one flavoring agent present in the abhesive chewing gum.

A method for providing single units of sugarless chewing gum and compositions so packaged. Individual pieces of chewing gum are provided which units will have a sufficiently long shelf life in order to allow the units to be sold and carried by a consumer even in environments that are detrimental to the stability of chewing gum, e.g., high temperature and humidity. To this end, a piece of chewing gum is provided that is substantially sugar free and that is surrounded by a wrapper, with at least a first portion of the wrapper being sealed to a second portion of the wrapper to create a sealed environment that houses the piece of chewing gum. The wrapper has a moisture vapor permeation rate of less than 0.10 g/100 in /24 hr at 100 DEG F, 90 % RH as measured by ASTM method F1249-90. In an embodiment, the wrapper has an oxygen permeability that is less than 0.10 cc/100 in /24 hr at 1 ATM as measured by ASTM method D3985-81.

To this end, a method for packaging at least one stick of chewing gum is provided comprising the steps of preparing a stick of chewing gum that includes a coating of an edible material that provides sufficient vapor barrier properties to provide the stick of chewing gum with a more stable moisture content at ambient conditions than a stick of chewing gum that does not include the coating, and wrapping the stick of chewing gum in a wrapper that does not include any metal foil material to create a wrapped stick of chewing gum. The sticks of chewing gum can then be packaged in a counterband.

Carbohydrate syrup-plasticizer compositions for use in chewing gums to improve flexibility and methods of preparing the compositions. The syrup comprises carbohydrate solids and water, with less than 30% of the solids having a degree of polymerization (DP) of 1 and more than 20% solids with a DP of 4 or greater. The ratio of carbohydrate solids to plasticizing agent in the composition is between 0.5:1 and 100:1 and the total water content of composition is less than 20%. The syrup-plasticizer composition is prepared by providing a carbohydrate syrup or combined syrups with the proper carbohydrate solids distribution, combining a plasticizer such as glycerine or propylene glycol and evaporating water from the combined syrup composition.
